hmm... soft cheese in a cookie? I just had to try it coz the pic looked so bright and colourful. I had to use liquid dyes instead of paste, and I didn't get many cookies, I made them too big... they came out like saucers lol much to my daughters delight :) I didn't add extra sugar into the mix, however I did roll them out in icing sugar to stop them from sticking to the counter. Overall, they were fun to make and the taste... yummy! This recipe is definatley a keeper, thanks so much for sharing!

Super fab recipe! So easy to make as well as eat. I used golden caster sugar, which gave it a brownish tinge, but really didn't spoil it's appearance. I also split the recipe into two, and ended up with about half a cup leftover filling which I will be using for sandwiches, yummy! Will definitely be making this one again!

I've never made anything like these before, and these were so easy! I used mixed nuts (pecans are expensive here in Wales) to try first and they came out fab. So then I committed myself with pecans and they were even better! They are so good I'm giving them as gifts for Christmas! Yummy!
