About this Cook
I love to garden, cook, and keep house. (well, not really cleaning, but I like the end result.) I love to entertain and have dinner parties. I'm 34, feel 25, have a two year old son and a husband. We reside in an ancient farmhouse in NC and LOVE it. Life is good. I'm aiming towards a full stocked pantry and just came across a fabulous cookbook at a thrift store, it's "Great Good Food Luscious Lower-Fat Cooking by Julee Rosso, co-author of 'The Silver Palate Cookbooks and The New Basics Cookbook'" - good stuff!!
My favorite things to cook
FRESH vegetables, good cuts of meat, sauces, baked goods, lasagne, grilled EVERYTHING....there's just no way to pin it down to a few things. I like to surprise my husband with new things and make old favorites over and over.

Hm...I guess I'm starting my own...everything from scratch would be a good place to start!!
My cooking triumphs
Have mastered several different recipes of Banana bread and am tweaking my own. A beef brisket recipe, with walnuts, cranberries and apples, with a beautiful sauce....yum!
My cooking tragedies
haha! There SURELY isn't enough room here, but a funny story comes to mnd...I was cooking on a 1910 Wedgewood wood cook stove and the oven was a bit test with the temp but anyhow, I was making an orange poundcake, from my favorite Barefoot Contessa recipe book and I just couldn't get the cake to set...the temps were too varied, anyhow when I went to take it out of the oven, I touched the grate w/my arm and I jerked it out of the oven, the mixture still quite liquid and spewed it all over the walls. I was SO MAD, I chucked the rest of it against the wall and just never baked anything important in THAT oven again. I really admire our ancestors of old, for 'making do' with those old cookstoves.

Soy Milk Pancakes
While I made a few variations, only due to what I had on hand, so far, these are the best vegan pancakes I've made/had!!(i doubled the recipe) The variations I used were to use almond milk/vanilla rice milk instead of soy. I used 1/2 unbleached all purpose flour and half whole wheat flour. I used an egg replacer. I added ground flaxseed - a couple tablespoons and about a tablespoon of shredded granny smith apple - and, finally a pinch of nutmeg. The result was fantastic, a nutty and wholesome treat topped off with organic maple syrup. Super tasty and filling.

Dee's Roast Pork for Tacos
This was so good - my husband raved about this to his buddies at work. So simple! Great taste, pair with black beans, tortilla's, pico de gallo, etc... voila!

Crispy Fried Fish
great recipe even for a fish frying "newbie" like me...things were going great (thanks to a thermometer in the oil, helping me keep a proper temp) until my son (3 years old) decided to take a closer look and dumped over the entire bowl of batter (where the fish was bathing in the batter) onto the waiting floor. What I DID fry, was very very good. Oh, and pay close heed to the review which specifies to use the corn flakes in succession, otherwise, you end up with a bowl of mushy cornflake crumbs that won't stick to the fish! p.s. I added just a bit (maybe a half cup) of yellow cornmeal to the batter.
