Chicken Noodle Casserole I

This is a great starter recipe. Like other reviewers, I made a few changes. It needed some more flavor so added dried onions, minced garlic, & a pinch of dried rosemary & dried basil. I also pan-cooked my chicken breasts & left them on top of the recipe instead of mixed in. Lastly, to make a little healthier, I used sprays of olive oil instead of melted butter for the topping. It was a big hit!

Quinoa and Black Beans

Excellent & nutritious recipe! In addition to the great stuff already it in, I DOUBLED the cayenne pepper, increased Cumin to 1 1/2 tsp, increased Quinoa to 1 cup, and added some fresh diced tomatoes & diced zucchini for extra veggies. Not only good for lunch or dinner, but as a nice warm breakfast helping too! Mmmm good!

Mahogany Chicken Wings

Excellent recipe! What a great flavor this gave my chicken. I used boneless/skinless chicken thighs. Also, I didn't have ground ginger so I used pumpkin pie spice instead. Served the chicken with steamed white rice & poured the juices (left in pan) over the rice. Yummy!!!

Beefy Spanish Rice

This was pretty good! I made a few alterations...1) didn't use ketchup or water (chicken broth instead), 2) used cream corn (as I didn't have the regular stuff), 3) didn't have bell pepper so used a can of diced tomatoes, 4) substituted ground beef with ground turkey, 5) used minced garlic instead of powder, and 6) added dried oregano & basil. This recipe really has lots of flexibility depending on what you have in the cupboard! Thanks!

Prize Winning Baby Back Ribs

Wow! Definitely the easiest rib recipe ever! The ribs were just perfect. I had 5 lbs and cooked 'unpeeked' for 1 hr 20 mins.

Oregano-Lemon Chicken

This recipe as great! As recommended by other reviewers, I cut the oregano just about in half. I also used twice the amount of garlic since my household likes it so much!

Lower Fat Banana Nut Bread

I made a few revisions but this is a great recipe! First, I only made 1/2 the original size so that I just made one pan of the bread. I used 1/2 white & 1/2 whole wheat flour, added 3 tbsp applesauce in lieu of margarine/oil, added 1 tbsp ground flax seed, used twice as many walnuts, added an extra splash of vanilla, and didn't use any raisins. For those interested, I timed the cooking and it took one loaf 37-40 minutes with no burnt top and a moist inside. NOTE: The whole wheat flour makes it a more dense bread and the lack of oil/margarine affects the consistency but neither change the good taste!

Baked Chicken with Peaches

Very good recipe. I used canned peaches and poured the juice from the can into the pan. This made the chicken moist. I am sure without that liquid, it would've been really dry. I also used ground clove, ginger and cinnamon. PLUS, I added in a few shakes of soy sauce to mix it up. Mmmm, good!

Bean Soup

As others recommended, I used the baking soda method for the beans. This recipe was a great base for spicing up! I used 2 whole medium onions - chopped and a whole cup of chopped carrots (didnt use celery as I don't like). I increased the water to 7 cups & chicken broth to 5 cups. I used 2tbsp of minced garlic, 2tsp of ground cumin, couple shakes of black pepper & 1tbsp diced jalapenos. Lastly, after pureeing half the soup, I simmered for an additional hour. This came out wonderful & the family loved it!!!

Slow Cooker Barbecue Beef

Based on previous reviews, I ad-libbed a bit. I put in 2/3 cup of onions, twice the minced garlic, added several dashes of worchestershire sauce and two tablespoons of honey. The sauce was wonderful & I served it over white rice. Great recipe!

Mom's Chicken Cacciatore

This was excellent! I put in twice the oregano and also added dried basil, plus a little extra wine, because I enjoy a healthy amount of seasoning and I served it over egg noodles. Mmmm good!

Mouth-Watering Stuffed Mushrooms

There is only one thing I'd change about this recipe. It calls for 12 mushrooms and I am able to stuff 24-25 with the ingredients listed for 12. Only increase the # of mushrooms & keep all the other ingredients the same. THIS IS A WONDERFUL RECIPE! Lots of praises! Yummy!

Anna's Custard Pie

This was the first custard pie I'd ever made. I took it for Christmas dinner and it was quite the hit! I do think that maybe something that could use to be noted is that the cook time was longer than on the recipe page. It took me about 35 minutes to get it to set, at 400F. I was using a gas stove, which may have been the reason. Regardless, it was a very tasty dessert!
