Addictive Sweet Potato Burritos

Really great recipe. I was worried the mash would taste too sweet but it's very subtle. unless I'm cooking for a large party, I would cut this recipe down in half. I have a massive pot of the filling now. I misread the instructions and mixed the beans with the mash before adding the spices but it works fine together. I'll definitely make this again and for when company is over!

Tofu Stroganoff

i really enjoyed this recipe. i used herb firm tofu and added a small can of cream of mushroom soup to give it more flavour. you can keep adding more sour cream until it suits your tastes.

Vegetarian Lime Orzo

amazing recipe! i don't normally follow measurements but i was close enough. i added a yellow bell pepper i had lying around when i added the carrots and zucchini. I also added more garlic. I didn't have itlian seasoning but i had this roasted garlic & pepper seasoning that I used a dash of. It tastes great without the parmesan. It also looks nice!

Quick Artichoke Pasta Salad

I like this recipe. I usually just add random amounts of ingredients according to eyeing the proportions and tasting. I added fresh grated parmesan and it works nicely! i also added sundried tomatoes (in oil but drained it first). i'll definitely make this again and try making it for a group next time!

Cold Szechuan Noodles and Shredded Vegetables

i really enjoyed this recipe except i made a couple of changes. first off, i wouldn't use as much sesame oil next time. i didn't have tamari sauce so based on another review, i used soy sauce mixed with worcestshire sauce. after mixing it with the noodles, i left some sauce aside because i wanted to cook the carrots a bit. i also added organic fried tofu (it had a bit of sezchuan sauce on it). i fried it up using the remainder of the sauce along with some garlic and ginger and the carrots. when it was ready to serve, i just added it to the dish on top rather than mixing the vegetables together (because of the different temperatures). i'll definitely make this again!

Veggie Quinoa

Pretty bland. I used a firm herb tofu and added one shallot, and green onions to it. I also added one red pepper and a dash of cumin to it but it stills feels like something is missing.

Carrie's Artichoke and Sun-dried Tomato Pasta

this is simple and delicious! i used a mixture of fresh olives because i'm not too keen on canned olives (too mushy). i also used cooking wine but used half the amount because I ran out but it seemed to be just enough. I would add more sundried tomatoes next time and I added a bit of sea salt to taste.

Layered Macaroni Casserole

this is pretty delicious! instead of using ground beef, i used yves veggie ground (1 lb). i didn't cook it for an hour because with the veggie ground, it's already cooked so that cuts down on the cooking time greatly. it tastes more like a lasagne. the clean up after is a bit of a mess but it's worth it! i'll definitely make this again!

Coconut Tofu Keema

I like this recipe but I added a lot more to it. I used a can of diced tomatoes instead of sauce. I added in chinese eggplant and red peppers. I don't normally measure things so I think I dumped in quite a lot of cumin and curry powder. I didn't have red pepper paste so I used this red thai curry paste. I enjoy this recipe and like the tomatoes in it!
