Mini Meatloaves

Reviewed: May 2, 2007
These Mini Meatloaves tasted really good! The brown sugar glaze really complemented the beef well, and the meatloaves were really moist. The next day, even the leftovers tasted great on toasted bread.

Polish Meat and Potatoes

Reviewed: May 2, 2007
I really liked this dish! It's such great comfort food. I didn't cook everything for as long as the recipe stated. I just made sure the potatoes were tender, and the kielbasa was heated through.

Mandarin Beef Stir-Fry

Reviewed: Apr. 29, 2007
I really liked the flavors and colors of this dish. The sweetness of the oranges blended well with the snow peas and mushrooms. However, the sauce was slightly salty. Next time, I will use less soy sauce or use reduced sodium soy sauce.

Puppy Chow I

Reviewed: Apr. 28, 2007
This recipe makes such a wonderful sweet snack! The chocolate tasted great with the peanut butter. I couldn't find a 17.5 oz. box, so I just used a 16 oz. generic box of corn Chex cereal. It worked great!

Pasta Ham Hot Dish

Reviewed: Apr. 24, 2007
This dish is a nice change from typical casseroles. I thought the corn, ham, and cheese was an interesting combination. It's a good way to use up leftover ham.

Lime Chicken Soft Tacos

These soft tacos tasted delicious! I really enjoyed the combination of flavors for the chicken. The lime really complements the salsa well. Next time, I might add some beans or Mexican rice to make the tacos more filling.

Gourmet Chicken Pizza

Reviewed: Apr. 23, 2007
I really liked the flavors of this pizza. The first time that I made it, the pizza was slightly burnt on the bottom, and it had only baked for about twelve minutes of the 20-25 minutes. The second time, I decreased the temperature to 400 degrees and only baked it about five minutes in the beginning then eleven minutes. Overall, the flavors are good, but the baking times need to be adjusted.

Chocolate Cornstarch Pudding

Reviewed: Apr. 23, 2007
I really like this recipe, because all the ingredients are already in the cabinet or refrigerator. The first time that I made it, the pudding was a bit soupy. I took the pudding off the stove after it had just started boiling and it coated the back of the spoon. So, the second time, I made sure it boiled for a little longer. After a day, the pudding turned to jello.

Banana Banana Bread

Reviewed: Apr. 19, 2007
This banana bread is really good. I actually thought it tasted better the next day, because the banana flavor seemed more intense. This recipe requires about six or seven bananas. I think the bread's flavor would be improved with some added spices, such as cinnamon, ginger, nutmeg, and vanilla.

Mexican Lasagna

Reviewed: Apr. 16, 2007
This Mexican lasagna was tasty and filling and was also really easy to make. I used cheddar cheese instead of Colby, and I made sure to spray my baking dish with cooking spray so that the tortillas wouldn't stick. Next time, I'll add refried beans and sour cream to give it more flavor.

Coconut Oatmeal Cookies I

Reviewed: Apr. 14, 2007
These cookies were very sweet! I really enjoyed the flavor combination of coconut and oats. Next time, I'll probably add some spices, such as cinnamon, or semi-sweet chocolate chips to give the cookies a bit more flavor. I was able to get about three dozen cookies from this recipe.

Beer Butt Chicken

Reviewed: Apr. 13, 2007
This recipe was so much fun to make, and the result was wonderful! The chicken was so moist and flavorful. I baked the chicken in a 350 degree oven for 1 1/2 hours. Make sure you line your baking pan with aluminum foil for easy clean up. This recipe is definitely a keeper.
