Baked Pesto Chicken

OMG!! So, good! I am in love with the Benno's Birdy at a famous deli in Ann Arbor, MI. It is muy delicioso! We followed the recipe, but oven-roasted the tomatoes, forked the chicken and marinated it for about 45 minutes before baking, uncovered, for about thirty minutes at 400. Served with a tasty baguette. Yumm-o!!

No Bake Cookies III

Not quite as "wet" as I like my no bakes, but an awesome recipe I highly recommend. Be sure to have all of your ingredients gathered and ready to go before starting. It didn't take long to get things rolling in our Emerilware, so be prepared to throw everything in and to enjoy a tasty treat!

Ultimate Twice Baked Potatoes

Love these potatoes! I omit the milk, it isn't needed. I also use a slice of velveeta on top instead of the additional cheddar cheese.

I did not care for these. It may have been due to the fact that I used the crock pot instead of baking. I would think about trying them again some time and would follow the directions as listed.

Kitty Litter Cake

This cake was great and perfect for our special occasion. We purchased a small litter box and matching scoop for less than three bucks at the big W. We used one spice cake and one classic white. We did not end up using all of the pudding. Skipped the liner and just mixed the cake and pudding all together in the litter box (saved on clean-up). This was a big hit! Thanks for the recipe :)

BBQ Pork for Sandwiches

Used boneless pork butt on low for 6 hours. Gave the butt a little rinse and pat dry with a good peppering before placing in the beef broth bath. This thing just fell apart when I took it out. Shredding was easy...trimmed the fat...added sweet baby ray's and let it sit for another half hour on low before serving. Served on whole wheat buns that were toasted under the broiler. So yummy!

Red Skinned Potato Salad

I made this for a bbq last week. Everyone loved it and I thought it was one of the best potato salads I have ever tasted. I followed the recipe except I used red onions, which worked great.

Added a few chocolate chips to each muffin. These turned out spectacularly. They puffed up nicely. ONLY MAKES 10 MUFFINS!! (as stated in the recipe) We had a lot of the topping left over.

Easy Roasted Red Pepper Hummus

We use 3 tbsp. of tahini, 3 tbsp. of lemon juice and 3 tbsp. of EVOO. This stuff rocks and is way better than store bought. We use celery, sliced peppers, carrots and pita chips for dipping.

Cream Cheese and Ham Spread

We add a few dashes of garlic powder and a splash or two of worcestershire sauce. Great to make at the beginning of the week and to snack on while waiting on dinner. We love to use pretzels for dipping.

Perfect Baked Potato
