The Best Vegetarian Chili in the World
Great Flavor combination! If making for people who don't like it too hot. Used 1/2 anaheim chili, 1 T chili powder, 1 can diced chilies. Used 2 28 oz and 1 14 oz cans tomatoes. Added 2 zuchinni squash, 2 yellow crook neck squash. Would be great over wild/brown rice! Made above changes, otherwise would be a little spicy for some in my extended family. I eliminated the beef crumbles, as I prefer just the vegies. I think the squash made up for the volume. Made a huge pot.

Greek Lentil Soup (Fakes)
Wonderful soup. Served to several friends who were somewhat anxious about lentils, but they loved it. I use balsamic vinegar to top it off with the olive oil and always serve with a crusty bread. Sometimes I have added a 15 oz can of diced tomatoes along with the tomato paste. Also I generally double the recipe as the lentils come in 16oz packages. One of those recipes that get better the next day!

Sweet Potato Apple Scallop
Outstanding recipe! I had 3 fairly large sweet potatoes and 2 large apples. I doubled the topping ( 1 cup brown sugar, 1/2 cup pecans), And added 1/2 flaked coconut. No orange extract but used zest from 1 orange. Had apple pie spice in addition to cinnamon. I was afraid it might be dry, so I added 3 Tblsp orange juice over potatoes and apples; I won't do that again as it was extremely juicy, probably from the apples. I also did not slice into rings; just quick 1-2" chunks, which was for me much faster. I was naturally quite sweet with the extra topping, but everyone loved it!
