Libby's(R) Famous Pumpkin Pie
Don't forget about pumpkin the rest of the year. I don't save it just for holidays. For a quick, rich treat, follow the recipe and make whatever changes you want in spices and sugar (I've even used 1/2 Splenda and 1/2 brown sugar). But forget the crust! Much easier to put in a 2 or 2 1/2 quart casserole dish and cook as you would a pie: done when the knife comes out clean.(But it won't spill over in your oven!) Imagine the calories you save by not eating crust. Serve as you would a custard or pudding, then top it off with FF Cool Whip and a little frest grated nutmeg! Thanksgiving any night of the year.

Brown Rice
Excellent! Used Onion Soup Mix and extra cup of water, and less basil. I did add 1 small can Ortega Diced Green Chilies. Adds flavor, not heat. I was trying to rush dinner, so I microwaved 5 minutes covered before putting it in the oven at 365 degrees. Fortunately I checked it at 30 minutes as it was done! P.S. This was made with white rice.

White Chocolate Party Mix
As everyone else, this is soooo good! I always use the microwave to melt chocolate, you can even use White Almond Bark in place of or in addition to the white chips. Basically the same recipe, but be sure to use Captain Crunch as one of your cereals. Unbelievable! Mine is Captain Crunch, Pretzels, Rice Krispies, Spanish Peanuts and maybe some crispy chow mein noodles.
