Salsa Borracha (Drunk Salsa)
its best if you take out the seeds and membranes from the tomatoes first. and start roasting the peppers with out adding the beer. then once you have removed a good amount of the liquid from the tomatoes then add the beer. i also reduced the amount of jalapenos. before blending let it cool a bit to room temp and remove the liquid or as much as possible then when you use the food processor just pulse a few times as to leave it still chunky adding only as much of the liquid as you need to keep it from clumping. also add the onion, garlic, salt, and i also added some time and coriander at this stage. taste and add salt and lime as needed. comes out pretty good. a friend ate a whole batch with a spoon while i was making dinner. causing me to have to go out and buy salsa. guess it was good.
