Awesome Slow Cooker Pot Roast

Can't get any simpler than this and tastes like you cooked all day. Perfect for those who don't like to cook or can't cook. You can throw in any vegetable as well. Great recipe!

Arabic Green Beans with Beef

This was simply beef and green beans with tomato sauce. I doubled the allspice, added garlic, pepper and served over rice. Still ended up with the same bland dish, beef+green beans+tomato sauce. Very disappointing.

Chicken Makhani (Indian Butter Chicken)

Did not like it at all. If you know what real Indian Butter chicken tastes like this is a very mild version. I compared it with the real thing (Indian cookbook) and it calls for 6 cups of chopped onion!This dish is definitely missing something...If you are a lover of real Indian food, skip this one.

Mom's Rum Cake

As a non-alcoholic drinker (I am allergic) I thought the rum was too strong, but got raves that the quantity of rum was 'just right.' Leftover cake was cut up in equal pieces for guests to take home. As for the glaze, I believe I found the solution. Initially, it's very runny, but if you remove the glaze from the stove for about 20 mins, it will thicken to a manageable consistency. I followed others in inverting the cake pouring the rum glaze over it, then let it sit 30 minutes and then flipped it over, and glazed the top, dusting with powdered sugar. I used a decorative mold and the cake turned out beautifully. Just be sure you spray the mold with cooking oil first, or the cake will stick.

Fruited Curry Chicken Salad

I boiled the chicken in beer, and used croissants as the sandwich bread. Excellent recipe. Made 12 sandwiches, and the little kids that never eat, (these were meant for the adults) were fighting over them.

Pesto Chicken Florentine

Very Easy. Used chicken thighs vs. breasts and seasoned with pepper. I reduced spinach by one cup and added 1 cup asparagus. Hate anything bottled or packaged, therefore made the Quick and Easy Alfredo sauce recipe, (change to 2 servings) and replaced with 3 equal parts of cream cheese, havarti and parmesan. Made the Pesto Sauce recipe separately and also changed to 2 servings. A lot of time is saved on all 3 recipes if you just throw everything in the food processer vs. grating. Didn't bother to rinse in between uses. When cooking the chicken/spinach together, drain the excess liquid into your hot pasta water. Serve with Alfredo sauce on the side versus mixing. Excellent recipe!
