Roasted Garlic Lemon Broccoli

I loved this recipe! I did tweek it a little. I started by blanching the broccoli for one min. Instead of mincing the garlic I thinly sliced it. Tossed everything together, and placed it on a broiling pan. After baking, i sprinkled parm cheese over and squeezed half a fresh lemon over it. Now i'm not a huge veggie fan but i did go back for seconds. Yum!

Gourmet Mushroom Risotto

OMG! I can't get enough!!!!! There are a few things I do different. Garlic......I can't live without it. So, I put some in. I also reduce the amount of mushrooms. I think there are too many. I cut them in half. Then I doubled of wine and cut down on the water. These changes were just curbed to my palate. Very solid dish!

Eggs Benedict

YUM! My boyfriend claimed it is so hard to make this dish. He challenged my mom and I by saying we couldn't reproduce his fav brunch item. Well, he was shocked at how well we did. He actually licked the sauce off his plate. Ha, we showed him! This was great and well worth the effort.

French Crepes

Yummy! These are so easy and so great. They cook quick and make a great breakfast. I made up a batch and kept it in the fridge. They kept great and I got to have fresh cooked crepes each morning.

Chocolate Caramel Cookies

These cookies are one of my favs! Just the perfect amount of chocolate. A few things I did..........I did not mix in the pecans. I just put them on top. I'm not a huge nut fan so just having them on top is the perfect amount. I also baked them in the large silicon cupcake pans. When they are done cooling they just pop right out no muss no fuss! All and all love it!
