Mexican Casserole

OH. SO. GOOD!!! Only change I made was adding onions to the chicken as it cooked. Otherwise followed recipe to a tee. Delicious. My husband loved it too. We didn't eat this on a cold night but kind of like chili it would make an excellent cold-winter-evening meal!!

Cheese Vegetable Soup I

Reviewed: Nov. 10, 2010
This is okay...not outstanding, not terrible, just okay. I guess to me when you make a soup with Cheez Whiz you're gonna have a soup that ends up tasting like...Cheez Whiz. Which is not necessarily a bad thing. But I think I'd like to try a cheese soup that has a little more nuance/less of a chemically-processed cheese taste to it.

Jennie's Heavenly Slow Cooker Chicken

This is absolutely delicious...I make this for my husband and stepkids on a night I always have to work late. It's so nice that it's ready in the crock pot when they walk in the door, and they always rave about how tasty it is. I follow the recipe exactly!

Miracle Soup

I didn't eat this myself (not a fan of seafood) but I sent the recipe to my husband for a night I was working late. He followed the recipe exactly and LOVED this soup. He'll definitely be making it again!!

Chocolate Mice

SO easy, and SO cute! I used chocolate graham crackers instead of cookies because as I predicted they processed beautifully in my food processor--super, super fine. My stepkids loved this project! And the mice are TASTY too! win-win

Princessxcooks--they didn't delete your review, they just added the same recipe under a different name. Last year's recipe (where I do see your review) was "Coconut Ghost Treats". I agree with others that the "ghosts" are difficult to shape.

I was wary of this recipe because I don't care much for mayo, but these were WONDERFUL!! Didn't taste "mayo-y" at all to me. I served them on square rolls. We will definitely be having these again!!

OMG if I could give this 10 stars I would!!! Absolutely delicious. My husband made this and followed it to a tee. I didn't have a chance to try it until lunch the next day and it was OUTSTANDING! I'm not even that big a fan of cilantro (he's a huge fan) but it was still absolutely wonderful. We'll be making this a lot!

Healthier Slow-Cooker Chicken Tortilla Soup

Reviewed: Feb. 18, 2010
Holy smokes! I knew this was going to be good but I had no idea just how GOOOOOD it was going to be! This was by far the best soup I have ever had the pleasure of making. It was so easy--I chopped everything and threw all the ingredients in a bowl the night before and refrigerated, and in the morning it took all of a minute to dump it in the crock pot and go! I made a few modifications: I have no idea what a cubanelle pepper is or where to get one, so I used poblano instead. It was the perfect level of "hotness"--not too spicy because I can't tolerate it but just enough of a kick for my spice-loving husband. I didn't have a bay leaf or cumin so skipped those. I added a can of black beans. I didn't have time to cut and bake tortillas so I just served Tostito's chips with it, but I got the "Multigrain" kind to make it a tad healthier. We also threw in some 2% shredded mexican cheese mix. A modification I will make next time: instead of whole peeled tomatoes I will use a can of diced. I found the huge whole tomatoes to be a little unwieldy when serving the soup and thought it would be easier to dish up using diced tomatoes. This made a HUGE batch! I took my crock pot in to work with the leftovers the next day to treat my coworkers. They all RAVED about it. My husband was disappointed that I gave away the leftovers instead of freezing them for later! Yum yum YUM this was absolutely perfect and I will definitely be making it again! If I could give it 10 stars I would!

Salsa Chicken Rice Casserole

Reviewed: Jan. 13, 2010
mmmm this was good! I'm not big on cream of mushroom soup but wanted to follow the recipe. I tried a bit of the soup mixture before putting the casserole together and wasn't impressed. However during baking the flavors all came together beautifully and this turned out to be way more delicious than I had thought! My husband LOVED it. Will definitely make again, and it was easy. Thank you!

Chickpeas in Tomato Sauce With Feta and Wine

This is pretty much made out of all my favorite ingredients, but somehow it just didn't appeal to me. I wanted to like it and appreciated all the favorable reviews, but it just wasn't that great in my opinion.

Frosted Cranberries

Reviewed: Dec. 10, 2009
I'm going to come right out and say the ONLY reason I made these was because they are pretty, and I wanted to impress my co-workers with my Martha Stewart skillz at our holiday party :) I don't like cranberries and I don't like sour stuff. However, I had to taste just one...and guess what, I couldn't stop! These are like candy! With just the right mix of sweet and sour. And they are SO easy to make---I used other reviewer's suggestions as follows: 1 T corn syrup to 2 T water, toss cranberries in mixture. 1 c sugar in a Ziploc bag. I used a slotted spoon to drain berries well before placing in bag, then closing and tossing well in the sugar. Spread it all out on wax paper on a cookie sheet, and a few hours later I had beautiful, tasty frosted cranberries!!! And I do mean tasty. All of my coworkers raved and several asked for the recipe. Success!

V-Eight Vegetable Beef Soup

Reviewed: Dec. 2, 2009
This was really good! I used stew meat and browned it a little bit first. I also added a can of beef broth and a packet of onion soup mix on other reviewer's advice. I also threw in some pearl onions for more flavor. Very easy, very tasty!

This is tasty and got lots of compliments at my stepson's Thanksgiving Feast...several of his teachers asked for the recipe. I skipped the orange extract altogether on the advice of other reviewers.

Green Bean Fries

Reviewed: Dec. 1, 2009
Not exactly nutritious, but oh-so-delicious! I used Italian bread crumbs and made these in a mini fry daddy. For sauce I mixed ranch dressing with a few dashes of chipotle tabasco...it was perfect! Yummy-yum! We were hoping the green beans and the sauce would be as yummy as those served at the Twisted Root Burger restaurant here in Dallas...they were not exactly the same but close enough to make us very happy!

Creamy Hot Cocoa

Reviewed: Dec. 1, 2009
Yummy! I followed other reviewers' advice and cut the sugar to 1/2 cup and it was plenty sweet! I also discovered halfway through making this that I didn't have enough milk (only 2 cups) so I topped the rest of the 3.5 cups with half-and-half. It was delicious!! We loved it after putting up our Christmas lights in the cold!

Garlic Parmesan Monkey Bread

Reviewed: Dec. 1, 2009
This was fabulous! I was in a time-crunch and had forgotten to thaw the frozen bread loaf, so I used two cans of refrigerated French Bread dough (the kind that is next to the cinnamon rolls and pre-made cookie dough at the store). Other than that, I followed the recipe to a tee and it was perfect!! We used large chunks of it as our "dinner roll" with our Thanksgiving meal and everyone said it was delicious!!!

Sugarless Pumpkin Pie II

Reviewed: Dec. 1, 2009
My inlaws are both diabetic, and my dad requires gluten-free so I used a gluten-free pie shell from Whole Foods. I hated to use just a cup of pumpkin and waste the rest of the can, so following another reviewer's advice I used the whole can, 3/4 cup Splenda, 3 teaspoons p.p. spice, and an extra dash of the evaporated milk. I was a little worried that I totally bungled it when after 45 minutes it was still not "set"...but after an hour in the oven it set beautifully. Everyone raved and my husband said it tasted exactly like a regular pumpkin pie. He is quite the pumpkin pie lover (I don't care for it myself and didn't taste it) but he said it was fabulous, so I feel comfortable highly recommending it!
