Me Eating Crawfish!!
About this Cook
I'm a happily married 26 year old from Covington, Louisiana. I've lived here in Louisiana my whole life and the best thing about Louisiana is the FOOD! I recently graduated college in January of 2008 and received a degree in Education. I am now a 6th grade Math/Science teacher in Slidell at Carolyn Park Middle School. My husband and I have been married for three years and I could'nt be happier! We are currently in the process of trying to start and family and we cannot wait to have a little one!
My favorite things to cook
I love to cook anything in the Crock-Pot!! My favorite dishes to cook would have to be Crawfish Chowder, Meatloaf, and pasta. I love to cook, but I find that I am always too tired because of work. I have now decided that I need to just make time..because besides teaching it is also my passion. Also, I love cooking desserts..they are so FUN!! Anything you can make in a trifle bowl is right up my alley! I also love to make any dessert that involves using my stand mixer!
My favorite family cooking traditions
I absolutely LOVE my Mom's cooking (who doesn't!) Some of my favorite things my mom makes is her Tuna Casserole, Meatloaf, Stuffed Bell Peppers, and Spagetti!! I remember Thanksgiving mornings helping my mom make dinner and my favorite part was helping make her dressing..it's the best!! This past year I finally made my Mom's dressing for Christmas.. and I have to say it came out PERFECT! I always make Crawfish Chowder on Christmas Eve and I'm known for making all kinds of desserts for all occasions! My favorite holidays to cook for are Halloween and Christmas!
My cooking triumphs
I think that I have just reached the stage in my life where I can cook really good and some of my food tastes better than my mom's and that's really saying something!! I am always willing to try new things in the kitchen and I'm always looking for something new to try!! My husband is the best tester..and he absolutely loves how I'm always making and trying new dishes.
My cooking tragedies
Ok whoever reads this is totally going to crack up laughing when reading this!! I just started cooking like when I was 17 and it's not like I was trying to cook anything from scratch, but from a box...Stovetop stuffing. I think I used too much butter and you know how it's supposed to be like a consistant texture, well it was runny! Can you believe I screwed up something as easy as Stovetop!! I've come a long way!!

Country Fried Steak and Milk Gravy
This recipe tasted like good ole country cooking! Don't over cook the cube steak when frying or it will be chewey. The ony complaint is that it did not produce much milk gravy, but I think I would add more milk next time..overall good dish.

Authentic, No Shortcuts, Louisiana Red Beans and Rice
I live in Louisiana and have never attempted to make red beans..this recipe tasted so good and just like all the red bean recipes here in Louisiana! Next time I would cut the water back to 9 cups, it was a little thin but the next day it thickened up. I also would not cook te sausage ahead of time and just put in the crock pot and it will cook up in there. I added just a little cajun seasoning for an extra kick! Thanks for the great recipe I will be making for years to come!

I made these cookies tonight to satisfy a chocolate craving and oh boy did it do the trick! They have that nice crisp to the outside and softness to the inside! YUM! I cooked mine for 15 minutes because they were a little big in size..so good!!
