Mini Cheesecakes III
ridiculously easy and tasty! i used an oreo (just one flat side with the filling scraped off) for the crust because i had some left over from a project with the kiddos. the lemon and chocolate combo worked really well! maybe a whole oreo would be even better...

Mulligatawny Soup I
delicious! very tasty and easy to make. definitely double the recipe. i used non-dairy margarine instead of butter and coconut milk instead of heavy cream so my dairy-allergic son could eat it. tasted great!

Perfect Pumpkin Pie
this is a very yummy pie! i normally don't like pumpkin pie...i think this one tones down the pumpkin flavor. i did heat the pie and spices on the stove first (and oops, the condensed milk as well!) and i only used half the amount of ginger to make it less spicy for my daughter's kindergarten class. i also used fresh grated nutmeg. she helped me make it and loved the flavor as well. i can't stop eating the leftovers! sooo good even when snuck straight out of the fridge. i don't think it needs added sugar...there is a lot of condensed milk.
