Thai Chicken Curry with Pineapple

Delicious! Definitely almost as good as what you would get in a restaurant. I used shredded meat from a rotisserie chicken and added some sliced scallions, but other than that, I followed the recipe exactly. This one is definitely a keeper!

Best Fried Green Tomatoes

I fixed these last night and they were pretty good. The only problem is that my husband and I thought that they were super salty. I used Italian bread crumbs instead of regular, so maybe that had something to do with it. I will definitely try these again, but I'll probably only use half the salt.

Awesome Slow Cooker Pot Roast

I followed this recipe pretty closely except I had a smaller roast, I used Lipton's beefy onion soup mix, and I added a little bit of minced garlic. I started with a frozen roast, heated the water before I put it in the crock pot, and let it cook for 12 hours on low. At the end of the cooking time I broke the roast up into chunks and let it simmer in the gravy a bit longer. It was DELICIOUS!! Definitely the most tender, tasty pot roast I've ever had. This will become a family staple!
