Fig and Lemon Chicken

I just made this for my husband, the lemon lover and he flipped. I do agree that 1.5 lbs of figs is a bit much and for us there wasn't enough sauce. So next go around, I'll eliminate the vinegar and replace with more lemon, double the sauce and reduce number of figs. This still gets a 5 star in my book. My tweaks are just for my family. The recipe is AWESOME as is.

Barbecued Beef

I realized most of these ingredients were to make a standard BBQ sauce..so I cheated one day when I was in a HUGE hurry and just covered the beef with store bought sauce. Turned out wonderfully!

Bread and Celery Stuffing

Spanish Rice I

My husband, the rice freak, LOVED this recipe and asks for it about once a week! Very easy to make and flexible enough to sub if you don't have everything on hand. I was out of tomato juice, so used a small can of tomato paste with equal amounts of water. Worked just great!

Italian Wedding Cookies III

These went over like gang busters! They are very delicate and are awesome in tea. They melt in your mouth!! I used walnuts instead of almonds or pecans, as those are the favorite in my house. Worked GREAT!

Deep Fried Dill Pickles

Chicken Parmigiana

I've learned that with Chicken Parm, if you don't pound out the chicken as thin as you get it in resturants, it doesn't dry out! Very easy recipe to follow. Takes time to cook..but little prep time.

Dirty Rice

I got this recipe because normally "dirty rice" is a cajun thing, so I made it with Cajun Chicken. It's more like spanish rice. However, it was a big hit! My hubby loved it!! Next time I make it, I'll do so with a spanish meal!

Cut-Out Butter Cookies

Great recipe. I ended up adding about 3 1/2c flour and to get it out of the mixing bowl and then had about 1/2c on the counter for rolling etc. I also added some lemon extract. Was a great little extra taste that you really couldn't taste in the dough, but the finished cookie was awesome. I frosted them with royal or butter cream icing and they always are a hit.
