About this Cook
My favorite things to cook
eggplant, mushrooms and zucchini are my favourites! and cheeses (like goat cheese and ricotta and bleus)... and quiches!
My cooking tragedies
getting stoned and messing up my favourite cookies! (chococonut chip cookies, from this site!) I put in twice as much butter as needed and they ended up a flat greasy mess!

Peanut Butter and Bran Cookies
They seemed a bit bland at first, so I added some chocolate chips and it helped a lot. They were super greasy, but didn't spread out too much, they we quite pretty cookies. I used chunky peanut butter for crunch, but next time I might add something else for a kick... almond butter, perhaps. Everyone really liked these! Try them frozen, too.

Zucchini Herb Casserole
This was fantastic! I had a bunch of guys over and they scarfed it down, no meat no problem. I made a few changes like other reviews suggested, a lot more spice, about a cup of rice, added one cup grated carrot, used extra fresh garlic (no garlic salt), used walla walla onion instead of green and parsley instead of oregano because I didn't have any on hard. Also broiled after baking to get the cheesy top to bubble. Will for sure make again and again! Thanks!

Convenient Vegetarian Lasagna
I used zucchini instead of carrots and it was delicious! Everyone I made it for raves about it. Also used fresh broccoli and basil, don't know why anyone would say otherwise. And I made my own tomato sauce... great recipe!
