Pollo Fajitas

I really enjoyed the flavors in this fajita recipe. It was delicious. The only things I did different was added more vegetables and some chipotle pepper, because I love the deep flavor. My family loved it and it was one of the easiest meals I have made in a while.

Corn and Zucchini Melody

I was looking for a quick, easy way to cook up my zucchini, thinking I would bake them with some shredded parmesan cheese, when I saw this recipe. Thinking it would be nice to get in more veggies, I made it, using pepper jack cheese instead, and LOVED it. Unfortunately, I did not have any onions but I'm really looking forward to making this again with the missing ingredient.

Strawberry Oatmeal Breakfast Smoothie

There are several healthy foods I know I don't eat enough: oatmeal and fruits are among them. Not having soy, I used 2% milk. Since I keep ground oatmeal on hand for all-natural beauty recipes, I used 1/2 cup of that since I did not think I would like the texture of the whole oats. I also used 1.5 teaspoons honey rather than sugar and added 2 tbs ground flaxseed. Next time, I'm adding 2 tbs wheat germ. The smoothie tasted delicious, just sweet enough, with the perfect consistency. I'm psyched to include this in my diet regularly. I'm definitely going to use soy milk in the future, though, since it has more vitamins, etc, than regular milk.

Mixed Vegetable Casserole

I picked this recipe and started making it before verifying I had all the ingredients. During execution, I realized someone had used up my cream of chicken soup and my white cheddar cheese. What to do?? For the chicken flavor, I added two chicken boulion. For the creaminess I was losing, I substituted a can of creamed corn. for the cheese, I used pepper jack cheese. I used 32 oz of frozen mixed veggies instead of canned but I cooked them before using them for the recipe. I was really good. Next time, I'll make it right but this is an awesome way to use up some of the veggies I always have stocked up in the freezer. I did think it needed a little salt but that might be because I did not use the cream of chicken soup. I like the fact that it's so versatile. I'm curious as to what other substitutions/combinations I can experiment with. Mmmm, creamy potato soup comes to mind, with chunks of chicken...

Onion Dijon Crusted Catfish

I scaled it down 2 servings. Since I read reviews that indicated the onion overpowered the flavors, I halved the onion and used a little more dijon mustard. It was really, really good and I'm disappointed I don't have any leftovers to heat up today. :) My hubby was skeptical since he does not like catfish but he tasted it and was pleasantly surprised. I think adding a little honey dijon, as well.

Banana Crumb Muffins

I was looking up banana pancakes when I ran across this recipe and decided to make it, as well. I made it EXACTLY as the recipe indicated. Wow. It was so easy and the result was delicious. I loved it. The streusel topping was awesome. The bread was soft and moist. The topping was lightly sweet and crisp and flaky. My whole family, including hubby, a 17 yr, 16yr, 3yr and 1 yr old. My 16 year old daughter, who is on a diet, did not want to eat any but I made her at least taste it and she ended up sheepishly eating a whole one. :) This recipe was so easy. I will definitely make again and again and again! :) I'm excited to adding nuts, raisins, fruits (strawberries? blueberries? - the possibilities are endless. Mmmm - mouth is watering just thinking about it.

Addictive Sweet Potato Burritos

Addictive is right! I loved the strange but surprisingly pleasant combination of sweet and tangy flavors. My 17 year old son loved them. My husband loved them. I loved them and, most difficult and important in our house, our toddlers loved them. We can't get my two year old to eat anything besides fish sticks, hot dogs and cheese, just about.

Herb Butter

Found this recipe when looking for a herb butter to use on frozen California veggies so my toddler would eat them. My toddler didn't even give it a chance but I sure did. Hubby, too. We love it. I'm not going to mind eating my steamed veggies any more! :) (Guess I know where my kids got their veggie aversion)

California Grilled Veggie Sandwich

I am DEFINITELY going to make this again... x a million. It was so delicious, my meat and potatoes hubby even rated it a 5 and compared it to food we eat at high end restaurants. To top that, my sixteen year old, fast food loving son, said it was awesome.

Groovy Green Smoothie

For something so healthy, with spinach, even, this qas quite sweet and tasty. Ironically, I made this for my toddlers to replace their Nutrigran bars but, while they did nto care for it much, I loved it. I plan on drinking this for breakfast 2-3 times a week. My husband liked it, too, drinking his own glass. The only thing I would do is keep it blending longer, in order to not have the little chewy spinach pieces. I don't like to drink AND chew.

Simple Turkey Chili

I normally make the Washabinaro Chili but I did not have the wasbai paste or the beer so I had to find a new chili recipe. Since I was starting a new healthy eating regimen and had turkey on hand, I chose this one. I'm glad I did. It was easy to make and the flavor was great. I may have overdone it on the red cayenne, even though I thought I measured it evely. It was a little on the spicy side. My chili-loving family approved of this recipe wholeheartedly.

Jen's Heavenly Egg Salad

I really like this egg salad. The additon of the green onions was delicious. While my picky two-year old wouldn't even taste them, my one-year old couldn't get enough. My husband laughed because she had "onion breath" afterwards! :) He ate his fair share, as well.

Washabinaros Chili

My mom passed on a tomato-based chili recipe that I would have sworn was the` best chili ever.... until I tasted this recipe. Since my family and I disagree on the spiciness of the recipe, next time I will use less chilis, but the actual flavor... mmmmmmmmmm. I even forwarded this recipe to my girlfriend, who's husband is a chili "connousieur" and even he raved about this recipe.

Cabbage Roll Casserole

One thing I love is a healthy, tasty and EASY meal. This is all that. So, I love it. And so did everyone else in my family, including my daughter who supposedly "hates" cabbage and wasn' even going to "taste" it! After one bite.. she wanted more. Her byfriend, also a cabbage hater, raved abouth this meal. After three times of making this, the only note I have is: Don't use too much cabbage (unless you actually want it to be the dominant flavor). I used more cabbage the last time, since it is hard to guage the "pounds" chopped, but I used too much cabbage, and my hubby commented on the cabbagey-flavor. As the recipe is written, it is awesome. Delicious. The flavors are well and equally balanced. Next time, I won't change a thing.

Roasted Cajun Potatoes

I'm always looking for a variety of ways to cook potatoes and I also love cajun flavors. I really did like them, except for I thought they were a ittle bland... I added more salt and they were decent but not "awesome". I'm still trying to figure out what else I need to add to get a tang or zing - or something.

Sweet Potato Pie I

I made this for Christmas dinner, in lieu of the traditional "candied yams". Evryone was pleasantly surprised. At first, my daughter's boyfriend would not even try it, saing he did not like sweet potatoes. After she badgered him a while, he finally gave in and tasted it. "Guess I do like sweet potatoes." :) This is an awesome, easy and delicious recipe was so glad to make something different for Christmas dinner. Thanks!!

Garlic Green Beans

I am shocked that I was so excited to eat these green beans. Guess it's cause I'm sually excited about a main dish or the dessert but the side dish? But I LOVED these green beans and can not wait to make these again. This time, I'm doubling the recipe or something so I can have left overs. I really loved the garlic and the parmesan cheese gave it a very distinct flavor. I made this exact to the recipe and will not change a thing next time, either.

Easy Sausage Stuffing

This was a wonderful recipe. It was kind of like the Cranberry, Sausage and Apple Stuffing but without the cranberry or apples! :) I loved the Cranberry, Sausage and Apple Stuffing but others did not like the non-traditional sweet/tart additions. This one was much more popular with the masses. I was afraid it was not going to turn out okay (because it was soggy before it sat for a while) but I added some crumbled, toasted bread and it thickened right up.

Roasted Vegetables

These vegetables were wonderful. I LOVED the full and tangy flavor of the vinegar and the thyme and it was always a nice surprise to bite into the sweetness of a sweet potato amongst all the other strong vegetable flavors. The only thing I did wrong was to use dried whole thyme. I do not really like to keep fresh spices around because I never seem to use them in time so I use dried. The toughness of the dried "whole" thyme was a little annoying, even though it was a nice flavor so I already bought ground thyme for next time.
