Basic Crepes

I love crepes! They are quick and easy to make and are easily adjustable for breakfast, dinner or desserts. This recipe is very good but I do like to use all milk instead of the water. Also, you can change it up by using Coconut Milk for a great, light coconut taste!

Persimmon Cookies

Great recipe! These cookies are perfect for the fall holidays. The spices really come through and the persimmon is barely noticeable! My only change was putting in 1/2 c white sugar and 1/2 c brown sugar. I also used wheat flour. This recipe is versatile and delicious!

Orange Pull Aparts

There is wayyy too little flour in this recipe. After going through the dough cycle in my bread machine, the "dough" looked more like batter. I ended up adding about 1/2 c plus a few tablespoons of flour to get it to the proper consistency. It still wasn't pliable enough to roll in the butter and sugar, so I skipped the butter, gently patted into sugar, then dropped the balls into a 9" square pan. I mixed the butter with a little bit of brown sugar and sprinkled on top. After adding the extra flour, it came out pretty good. The orange flavor is really nice. For the topping, I mixed about 1/2 c of powdered sugar with a little bit of milk and a bit of almond extract and drizzled it on top. If you make this recipe, make sure you have extra flour because you will need it. I'll make it again!!

Strawberry Lemon Muffins

This is a great recipe! Super easy to make, and perfect for using up all those strawberries and lemons that have come into season right now. I added 1/2 tb of almond extract and a sprinkling of cinnamon and nutmeg. These muffins were delicious and made a great dessert with vanilla ice cream and fresh strawberries on top!

Pumpkin Ice Cream Pie

***I have to upgrade my review to five stars. I made this pie twice for two family gatherings and both raved about it. The recipe calls for waaay too much ice cream- enough to make two pies. I just stored the extra ice cream mixture in a plastic container with a piece of waxed paper beneath the lid to stop ice crystals from forming. This pie makes great leftovers and the only hard part is transferring the pie without it melting. I recommend an ice chest or cold-thermal bag with ice packs. This is a sure-fire pie!

Chocolate Cupcakes

This is a good recipe, but I agreed with some of the other reviewers on a few of the points, a) These could have been more chocolate-y, and b) They rose inconsistently. BUT these came out pretty good, and although I was mild on them, everyone who tried them loved them. I would make them again, but would try a frosting to go with them.

Artichoke Spinach Lasagna

What an amazing Lasagna! This was my first shot at making lasagna and it was delicious! This recipe isn't getting rave reviews for nothing! It's also very versatile- you can easily incorporate other ingredients to make it to your liking, or do the same by limiting or omitting others. The feta cheese added a great zing to it. I think next time I'll add black olives and experiment with the pasta sauce! I'm bring this over for Christmas-eve!

Vegetarian Ribs

Wow! This was great! One of the things I missed when going vegetarian was ribs and this is a great alternative. My only problem was spreading the peanut butter on the mixture- it didn't seem to want to stick at all until the onions and oil were added. This recipe impressed my skeptical friends, too!
