Almost Eggless Egg Salad
I am not a vegan or vegetarian; however this recipe was great. I was looking to use of some leftover tofu I had and am so happy I came across this recipe. I personally don't think you can tell that there are no eggs in it. The flavors were wonderful and I even had everyone at work trying it. Give it a try!

Homemade Black Bean Veggie Burgers
I made these last night and think the recipe is a good base, but needs some additions. I added jalapeno, cilantro and a little tofu to my mixture. Even with the jalapeno, hot sauce and chili powder, the burger was still bland and not spicy. I think it needs some salt and pepper because I can only taste dry beans and cumin. I used a cilantro sauce on my bun instead of ketchup or mustard and that seemed to add some much needed flavor. One of the reviews suggested quinoa and I think that would be a great idea. Not a bad recipe, but you'll want to tweak it to your taste.

Chantal's New York Cheesecake
I will never use another cheesecake recipe again after finding this one. I have made this so many times now and always get so many compliments on it. After making it several times, I realized that I wanted a lemon flavor to it, so I typically add some lemon zest as well as the juice. After a day in the fridge, the lemon flavor is very noticable. I always use a water bath and have never had my cheesecake crack. I also use my food processor to mix this as it gives it a much creamier texture with no lumps at all.
