Thimble Cookies

These were just what I was looking for! We made these in Home-ec class in grade eight and ,oddly enough, I had lost the recipe. I used half very finely chopped walnut and half rice crispies for the coating--nice and crunchy outside. Also used some homemade blackberry jam a friend had made. Cooking times seemed accurate, and a wooden spoon with a rounded end stood in for a thimble. Delish!

Avocado Mango Salsa

Easy and delicious! I used sweet onion, and a jalepeno instead of habenero pepper. Served with tuna steaks and garlic rice--really went well. Next time will use the red onion for a little more bite.

Blue Cheese Burgers

Doubled the blue cheese, and used gorgonzola for a really sharp taste. They were delish with fresh tomatos and thinly sliced red onion. Definately chill before BBQing so they hold together. Will make again.

Snickerdoodles III

I don't believe in using anything but butter in baking, so was happy to come across this recipe. I did turn the heat down a bit, to 350 as suggested, and they were great. My brother-in-law actually asked for the recipe--how weird is that?

Easy Chicken Tetrazzini

I cut the recipe in half, and used about half of a supermarket rotisserie chicken. Added a little (tsp) crushed garlic to the sauce, plus about 3 oz of light cream cheese that needed to go, and probably way too much sharp cheddar. A really good recipe that I'll make again. Others in the house loved it and would like it every week till the end of time. Very good leftovers, too.

Slow Cooked Corned Beef for Sandwiches

Yum yum yum! Tried a different recipe last year and was just not happy. Had it tonight with buns, mustard and coleslaw and it was just what this german girl wanted for St. Paddy's day. Glad I didn't halve the recipe-- I want all the leftovers for corned beef hash in the morning.

Savory Garlic Marinated Steaks

Very good flavour! I tried this with moose steaks, marinated only 4 hours but had great results. Will try a longer marinade next time. We really liked the pepper/honey combo.

Easy Crab and Horseradish Dip

My sister used to serve something like this and I always assumed it was incredibly difficult to make. What a big faker she was! I made it exactly written, but sprinkled slivered almonds on it and baked it (no microwave). It was great, every bit was gone. About 20 minutes in a 325 oven, if anyone wants to know.

Maple Apple Crisp

I used the apples from our yard, (no idea what kind they are, some kind of royal gala/jonagold mix) and the maple syrup my mom sent me from Ontario, a number 2 amber made by Mennonites, and I have to say this was great. Way to impress the new in-laws! I did add a bit of cinnamon to the topping, because I just couldn't imagine apple crisp without it. Otherwise followed the recipe and wow!

Amazing Pecan Coffee Cake

This was great--had guests over for coffee and they loved it. I didn't use the foil, just sprayed the pan with Pam (the baking kind, with flour) and it worked fine. Also used 1 and a half times the topping, as per lots of reviewers, and that was good advice too. Thanks everyone!

Spiced Pot Roast

I added things at the wrong time, put in too much broth by accident, had to use a mixture of scallions and onion flakes and this was still one of the best roasts I have ever produced. Leftovers were gone by noon the next day.
