Russian Mushroom and Potato Soup

This stuff is amazing. I used portabella mushroom, onion instead of leeks, and vegetable broth. This soup is definitely comforting and delicious. I wouldn't change a thing about it if you don't have to due to lack of ingredients.

Tofu and Cheese Stuffed Shells

I increased this recipe to feed 6-7 people. It was delicious, but there wasn't enough stuffing to fill all the shells! It could have been my own error, but it wouldn't hurt to make a little extra stuffing so that your shells are nice and packed. Also, if you layer the shells, make sure you put your sauce and cheese in between layers. Scrumptious!

Terrific Turkey Chili

Weight Watchers people~ about 6 points per bowl (a good helping) if you use x-tra lean ground turkey. This doesn't include the sour cream and cheese on top. I even added a can of black beans, and a can of chili beans. To make servings bigger, add more 0 point veggies like mushrooms and bell pepper. I've lost 60 pounds on Weight Watchers, and I am extremely careful about calculating points, so you can trust me! ;)

Chocolate Chip Banana Muffins

Very good! I replaced the oil with unsweetened applesauce, used half whole wheat flour and half white, and used 1/2 brown sugar and 1/2 white. Don't use milk chocolate chips, however. I tried that the first time I made them, and it didn't work out. Also, a user suggested not using muffin cups, but mine burned on the outside when I tried that the first time. It's probably because I had the nonstick kind.

Zucchini-Chocolate Chip Muffins

ATTN: Weight-Watchers people: these are AWESOME. If you follow the following specifications, each muffin is only 3 points: 60 grams semi-sweet chocolate chips, 28 grams walnuts, 1 small grated apple, 1/2 c. unsweetened applesauce in place of the oil, use half whole wheat flour and half white flour, 1/2 c. brown sugar and 1/4 c. white sugar (instead of all white sugar), 1/2% milk instead of whole, and 2 small grated zucchinis (no need to peel). It actually makes about 14 muffins because of the extra zucchini and apple. VERY FLAVORFUL and full of fiber. The mix will seem very wet, but they turn out moist. Check them at 20 minutes with a toothpick and then continue baking at 2 min. intervals until toothpick inserted into muffin comes out clean.

Chicken Salad

Very good! I used 2 strips center cut bacon (less fat), light mayo, and 1 small diced apple instead of water chestnuts didn't have on hand). I tossed the lemon juice in with the apple to keep it from browning and added a little more lemon juice to the mayo. Other than that, I followed the recipe as it was written. If you do Weight Watchers, a 1.3 oz serving (1 serving according to my calculations) made the way I made it is about 7 points. It would be even less points if you used fat free mayo.

Fast and Friendly Meatballs

Very, very good. I made them for a Weight-Watchers Mediterranean-style pita sandwich. I added cumin, garlic powder, onion salt, salt, pepper, ground sage and a splash of water. Also, I used two egg whites instead of an egg. They turned out moist and VERY flavorful. Don't massage the meat too much, though, if you're using extra lean ground turkey. I mixed everything with the beaten egg first and then mixed it in JUST enough. YUM!!!

Sausage and Mushroom Calzones

These calzones were SOOO good. I used awesome-tasting Jennie-O hot Italian turkey sausage for a leaner calzone, and sautéed fresh white mushrooms in olive oil with freshly minced garlic and Italian seasoning (instead of jarred mushrooms). I also used Rhode's frozen bread dough like the previous rater suggested (delicious). Toward the end of the baking time, I brushed the tops of the zones with olive oil and parmesan cheese. I baked them a little longer, until they were golden brown. My fiancé LOVED them and the way our apartment smelled while they were baking :). He bragged about them at work the next day.

Moroccan Chicken
