Chewy Caramel

These are excellent. I had the recipe a long time ago, so it's nice to find it again. Many people like the caramels that take forever to cook slowly, but I can't tell the difference.

Jalapeno Popper Spread

This got rave reviews. I thought it would have been even better with a whole drained can of jalapenos. It was very good. I used the low-fat cream cheese and it was fine.

This is a great recipe. I don't use the white sugar in the icing because it doesn't need it. The icing seems like mixing cement, but it is very good.

Gourmet Sweet Potato Classic

Yum! I never use the 1/2 cup white sugar and instead use 1/4 cup brown sugar in the casserole. I also reduce the 3/4 cup brown sugar in the topping to no more than 1/3 cup brown sugar. It's still very sweet this way. The 2 Tbs. of whipping cream adds a nice flavor, too. It might need a little more cinnamon up to 1 teaspoon, but check the flavor as you go.

Chicken Wild Rice Soup

I loved this recipe. I added a little zip to it by adding about 1/8 teaspoon or less of tarragon to it. I also never use "cream of anything" cans of soup. Instead, I tripled the butter and flour, cooked it until it lightly tanned (creamy looking to a light brown) and then added the chicken broth while it was still simmering stirring quickly while it thickened a little.

Sweet and Sour Sauce I

This is a good sweet and sour sauce just the way it is. It has ingredients I always have in the house. It may need more cornstarch, but that's a simple fix with a little water with cornstarch stirred into it and then cooked into the boiling sauce until it thickens.

Toasted Almond Party Spread

I just heated this in the microwave oven carefully in a Corelle-type cereal bowl and put the remaining toasted almonds on top. It turned out great! Everyone at work loved it with the crackers.

Winter Fruit Salad with Lemon Poppyseed Dressing

This is an excellent salad. I always put in mangos and fresh strawberries, -instead of the two fruits she adds. It gets raves all the time! You could add some sugar baked pecans instead of the cashews. I'll have to try it that way! Aw, heck, it's good the way it is!

Winter Fruit Salad with Lemon Poppyseed Dressing

I put in a fresh mango or two. Also, I use whatever fresh fruit is available, strawberries, raspberries, or whatever. Mozarella cheese works great, too. The dressing really makes this salad; lemon is better than vinegar.
