This is a wonderful salad option for those of you who want something different. It also makes a beautiful presentation!

Penne Pasta with Spinach and Bacon
This is an excellent side for chicken or fish. i recommend using fresh tomatoes instead of canned and a little butter for more flavor. Make sure to toss in some seasoning like basil or oregano. Without it, this tends to be a little bland.
