Chicken Tortilla Soup IV

Foolproof recipe. I've made it many times, with various small changes, such as adding some zucchini (surprisingly good!!!), tostada shells or chips instead of fried tortilla strips, etc. I often use leftover precooked chicken, so it goes really fast. Also works great in the crockpot, just throw everything in and cook on high for a few hours.

Sausage Barley Soup

This was interesting, but no one in my family cared for it much (and my family is not picky!). The frozen spinach seemed to give it a rather strange taste... if I try it again, I might try fresh spinach, or cabbage.

Easy Oatmeal Muffins

Great basic recipe. I've made them a couple times; the first time I followed the recipe except for substituting whole wheat flour for white, regular rolled oats for quick-cooking, and brown sugar for white. Great color and texture. Today I made them again, adding three very ripe, pureed bananas. Delicious! I cut down on the sugar, but I could have left it out entirely. This is definitely a flexible recipe - the best kind!

California Grilled Veggie Sandwich

I'm not vegetarian and neither is anyone in my family, but this was a huge hit. The mayo spread and feta seem to be the key. I made it twice - the first time I used dill rye bread (toasted first then broiled with the cheese etc) and topped it with broiled veggies (zucchini, red onion, and green peppers). The second time I used regular whole wheat bread (prepared the same) topped with sauteed zucchini and yellow onions. The first time was definitely better (the red onions add a lot!) but both were delicious, quick and easy, and guilt-free!

Chicken Macaroni Salad

This is a great recipe with some minor changes. I think 3C mayo is WAAAYYY too much. I put in maybe 3/4 cup and I think I used more chicken and pasta than called for. I had a couple chicken breasts already cubed so I pan fried those with some salt, garlic and basil. I used a can of corn, added some grated carrots and green onions. The lettuce stayed nice and crunchy, which surprised me. Everyone in my family loved it! Pefect summer picnic meal.

Famous Chicken Adobo

Delicious and easy. It seemed kind of silly to put in fresh garlic and then add garlic powder, so I just used about 8 cloves of garlic and added it with the onion. I used almost 5 lbs of chicken I think (leg quarters) and there was plenty of sauce to go around. Thanks for a great recipe!!

Dee's Roast Pork for Tacos

Delicious. I put it in the crock pot with a little bit of water (1/2 cup?) and left it over night. I shredded it for sandwiches, tacos, and tostadas. I didn't have taco seasoning so I added a little cumin. So flavorful and easy!

Banana Chocolate Chip Dessert

These are so tasty! I put quite a bit less sugar (no brown), more banana (1 1/2 cups?) and used part whole wheat flour. I had to bake them about 5-7 minutes longer, but that might be my oven. I sprinkled some chopped walnuts on top. They turned out soft and cakey - so flavorful, and much quicker than cookies!

I used 8 medium potatoes, 4 cans of tuna, and mozzerella, and I added a little bit of frozen broccoli and salt. I also "eyeballed" everything so I'm not sure of measurements. I think I should have baked the potatoes a little longer (they were hard to mash up) but they came out tasty and my family loved them! I had a lot of extra filling that I put in a cassarole and topped with cheese.
