A great recipe. The only thing that I changed was to bake in an iron skillet as other reviewers suggested for 25 minutes.

Eggplant Parmesan II

This was a great recipe. I used panko bread crumbs mixed with regular bread crumbs to bread the eggplant, layered baby portabella mushrooms with the layers and used garlic powder, red pepper flakes and italian seasonings on each layer.

Pepperoni Bread

I brushed the dough insides with melted butter mixed with onion powder, sprinkled minced garlic on top of that, then spread a light layer of basil pesto followed by pizza sauce and then the turkey pepperoni and cheeses. I rolled it up and brushed the outsides with egg and leftover butter mixture. I also used the pillsbury french bread, as other members suggested. I loved it. Quick and simple!

Slow Cooker Chicken and Dumplings

I added garlic cloves (crushed), broccoli, califlower, carrots, cumin and celery seed. I also baked the biscuts and poured the mixture over them. It was a good comfort food, but I do wish I would have tried it on my own before making it for guests. I thought the mixture should have been thicker, but that was probably due to not adding the biscuts to it as the recipe calls for.

Tofu Parmigiana

Excellent recipe! It was my first time working with tofu and I was so impressed. I used other reviewers advice and froze the tofu for one hour, used egg to make the bread crumbs stick and then baked in the oven 15 min on each side rather than frying. It was perfect.

Great recipe! I added feta cheese, as a previous reviewer suggested and they turned out great. I plan to make both these and traditional eggs for Easter to see which go first.

Broccoli and Tortellini Salad

I love this recipe! Everytime I make it I have people ask for the recipe. I cut the sugar and onion amounts in half and substitute crasins instead of raisins. A favorite!
