My cooking triumphs
making 2 wedding cakes.. my niece got married 2 yrs ago and nephew last year.. both asked for a 3 tier decorated cake.. I make decorated christmas cookies- I get compliments and rave reviews on the cookies.. took it up a notch and tried the wedding cakes..thinking 'sure I can handle this..' they turned out really pretty and also got rave reviews. You never would of known they were my first few cakes. I'm sure I will make one again however..family members beware!!! they are alot of work.. very stressful - I am too much of a perfectionist!! It is something that 'everyone' looks at and will be in pictures for years to come. We all can be our own worst enemy sometimes! It was a huge feeling of accomplishment to know that I did this -- they looked very nice, got rave reviews and tasted very good too!!

Chicken Milano
This was fantastic! Even the rest of week as leftovers it was supberb! I made this for college sons birhtday dinner. I 4x the recipe. I had 10 guests. I did not use the recipe calculator-- I just 4x all ingredients. I cooked the chicken as directed, but since I had so much to cook, I browned all chicken in pan with oil as directed and had all drippings.. I did not cook chicken all the way thru. I transferred all to platter and then grilled till done. Since this was for a crowd,I sliced chicken into strips and cut into 2 inch pieces. I didnt want to plate each persons plate so I served it all family style.. cooked fettucini, sauce and chicken--mixed all in bowl. I did not use all the sauce, there was probablly 3 cups left. That came in handy when saving all leftovers, I poured remaining sauce over everything and that kept it all moist and extra creamy. (you know how sometimes left overs get dry) My husband, and our daughters boyfriend ate left overs for a few days this week and each raved how this was fantastic with each reheating.. A definite one to make and save!! Definitely restaurant quality.

Oaxacan Tacos
These are wonderful and so authentic too! I love to try new things and really felt that this was a wonderful recipe- get so tired of basic things- loved the flavors!! Excellent!!! Thanks!

Lime Chicken Soft Tacos
This was excellent! Served for youngest son's highschool grad party in June 2007-We did a Mexican Theme party- Was looking for the perfect flavoring for Chicken Tacos, and hit the nail on the head with this recipe! EXCELLENT!! would not change a thing!! Very good and flavorful!
