About this Cook
I am a single parent (by choice) of a beautiful 2 year old boy. He is my life! I work for an advertising/ accounting company and I have worked there for 22 years! I am only 39 so you do the math. This is my first and only job I have ever had. I moved up in position and salary over the years and I enjoy working with the people so why change if you’re happy. Right? Plus I get some perks and we have flex hours. I work 4 days a week which is great because I get to spend more time with my son, cook and bake! Life is good. I started cooking when I moved out from home. I didn’t really know how to cook and my sister gave me my first cookbook (which I still have). It’s a basic cookbook by Betty Crocker so you know it’s a good one. The recipes were so simple and tasty. That led me to want to learn more so I watched Food Network every day and picked up a lot of techniques and cooking methods. It’s the next best thing of actually going to culinary school. My favorite things to cook
I started cooking American and Mexican. When I became more comfortable and confident in my cooking, I moved on to Chinese and Italian. I make an awesome Lasagna. I recently started cooking Inidan. I have a really great recipe for Tikka Makhani which is chicken in a spicy Indian curry. It is out of this world! I also love to bake and I will add some of my favorite goodies I have baked recently. I don’t usually take pictures of everything I make but you will get an idea.
My favorite family cooking traditions
My cooking traditions are Mexican since my parents are Mexican and I grew up watching my mom cook enchiladas, tacos, chiles rellenos, mole, pozole, well, you get the idea. Don’t mean to make your mouth water.
My cooking triumphs
I think I was and am most proud of my Thanksgiving dinners. I usually cook the entire meal all by myself for the entire family of 20 people! I start a couple of days in advance and make everything from scratch (even the dinner rolls) and pies!
My cooking tragedies
There a few times when I will follow a recipe and it will not come out good. I like to think it was a bad recipe instead of my cooking. Lol. I guess sometimes I forget to add an important ingredient. Like the other day I made a carrot cake and forgot to add the baking soda. The cake still tasted good but it did not rise. Gee, I wonder why? :)

Alan's Ultimate Bran Muffins
I love to bake but I always found myself baking cookies, cakes & other unhealthy sweets so I decided to try & bake something healthy for once so I came across this recipe and decided to give it a try. Wow, I was surprised at how good they were. I did add a little brown sugar to make them at least a bit sweet and I enjoyed them with a cup of coffee. I would definitely bake them again. I will add walnuts next time with the raisins. Delish!
