Me and my Shadow

About this Cook
I am 45 yrs old and have been cooking since I was young. With 5 kids in the house and a working Mom, we took turns getting supper on the table before Mom came home. Living out in the country in Indiana, when we were bored, we baked. In Feb 2006 I had Bariatric surgery. I turn to allrecipes.com for new ways to cook my old favorites.
My favorite things to cook
I LOVE using my crock pot! I work nights and sleep during the day so using the crock pot allows me to have dinner on the table at a reasonable time without sacrficing my sleep! I look for great tasting-low carb and low sugar recipes. After Bariatric surgery, I cannot tolerate much sugar in a dish. I'm learning there are lots of other flavors out there besides "sweet".
My favorite family cooking traditions
Now as adults, we plan themed holiday meals. One Christmas was late morning and we all brought brunch dishes. One year it was pizza and we all brought different pizzas to share. Another year was loaded potatoes and salads.
My cooking triumphs
Not sure if I have any triumphs. Unless it's when my kids light up when I yell "FOOD!"
My cooking tragedies
The first Thankgiving after my divorce. Dinner was at my house. The turkey didn't get done. The cornbread didn't cook. The rolls didn't rise, and the cat dragged in a dead sparrow and ran through the house. We found her in my daughter's bedroom in the middle of a pile of feathers with a very triumphant look on her face! None of the family has ever topped that holiday meal!

Awesome Slow Cooker Pot Roast
I followed the advice from other reviewers and browned the roast first. Before browning, I covered the roast in pepper, seasoning salt and flour. I also only used one can of mushroom soup and it made plenty of gravy in the crock pot. I cooked it on low for six hours.

Chicken Casserole
I altered this a little. I used cubed potatoes, cooked in the microwave instead of noodles. I didn't use cheddar cheese or olives. I sprinkled some freshly shredded mozzarella over the bread crumbs, popped it all in the oven for about 15 minutes, a couple of minutes under the broiler to brown the crumbs and cheese and dinner was served!

Slow Cooker Pork Chops II
Turned out very dry, even though I always cover my crock pot with foil under the lid. I used thick boneless chops that are very lean. Maybe others used bone-in or fattier chops.
