Anniversary Chicken I

This chicken was AWESOME!!! I browned the chicken in olive oil, rather than vegetable oil, adding some black pepper and garlic to both sides of the chicken while cooking. I did what several other reviewers suggested and added the shredded cheese, bacon bits, and green onions half-way through baking. I would probably use fewer bacon bits (it was a little salty). I was out of teriyaki sauce, so I subsituted soy sauce and a couple packets of sweet and low, and it seemed to work. I cooked this for my parents, and my very, very, very picky father REALLY liked it!!! Will definitely be making again!

Glazed Dijon Carrots

These were pretty good. I had never tried glazed carrots before and was pleasantly surprised with the results. I might use a little less mustard next time, as they tasted pretty mustardy (and I LIKE mustard). We didn't have baby carrots, so I cut a few regular carrots into bite-size pieces, which worked just fine (and less costly!). Good recipe!

Alyson's Broccoli Salad

DELICIOUS!!! Substituted halved grapes as other reviewers suggested (and doubled the amount as well). Also used a packet of splenda instead of sugar. A fabulous combo of sweet and savory and crunchy. Loved this recipe!!! Will DEFINITELY be making this again!

Chicken Cordon Bleu II

I made a few mistakes when making this (I'm a beginner, ok?!), such as purchasing chicken tenders instead of breasts and somehow totally screwing up the sauce (it was thin and I was stirring it over low heat, then suddenly it became a big gloppy mess!), but it still ended up tasting delicious, if somewhat not as visually appealing! I served it to my parents, who cleaned their plates--even my dad, who is rather picky. My mom said that it tasted very gourmet. I did add a bit of dijon mustard to the chicken before putting on the ham and cheese, as well as adding a slice of cheese to the sauce as others had recommended. Will definitely attempt this again, hopefully with fewer errors!

Easy Mushroom Rice

This was super easy, even for a beginning cook like me! I substituted cream of mushroom soup and chicken broth for french onion soup and beef broth, as others have suggested. I also only used about two tablespoons of butter, as well as adding a dash or two of minced onion, garlic, and parsley. I let it bake for an hour, but it still needed about five additional minutes to be completely cooked. I served it to mom, who enjoyed it (she went for seconds!), and my dad, who thought it was just ok (he's not into mushrooms). Will definitely make again!

Boilermaker Tailgate Chili

I didn't end up following the recipe as written (partially by accident and partially on purpose). I forgot to buy Italian sausage at the grocery store, so I wasn't able to include that (and I had really been looking forward to it!). I also left out the hotter ingredients (hot peppers, Tabasco, etc.), since my family are somewhat wimpy about very hot dishes--and it was still PLENTY hot! I only cooked the chili for about an hour, as opposed to the two hours recommended--we were too HUNGRY to wait! The finished product was very thick and very, very spicy. The cheese on top helped to cut the burn a bit. I enjoyed it and am looking forward to leftovers for lunch today!

Julie's Chicken Salad

I enjoyed this chicken salad, for the most part. I added a bit less mayo, as suggested by others--3/4 cup was plenty, and I LIKE mayo! I very much enjoyed the addition of green onions (I might add four instead of two next time), but I couldn't really taste some of the ingredients (raisins, celery)--don't know if more should be added or if they can just be left out entirely. A nice light dinner--we had it with croissants. Thanks!!!

Deluxe Mashed Potatoes

I thought these potatoes were yummy! I would add way more chives--they added soooo much flavor and texture. Delicious and creamy potatoes, albeit not particularly heart-healthy!

Incredibly Cheesy Turkey Meatloaf

I thought that this meatloaf was rather bland (even after adding some of the spices and extras recommended by others). I had been so excited about gooey pockets of cheese, but it was sort of a letdown. Not much flavor for all the added fat, cholesterol, and calories, in my opinion! I enjoyed the chunk of colby cheese I popped into my mouth while I was cooking more than the finished product. Not a bad dish, but not particularly special.

Rose Petal Sauce for Hens

I loved the book and movie 'Like Water for Chocolate' and I love this delicious and magical recipe! Supposedly, it has aphrodisiac side effects, so a wonderful idea for Valentine's dinner with your sweetie!
