My favorite things to cook
I love to bake and make candy, though I only manage this at the holidays! Otherwise I like things I can throw in the crock pot, and am also interested in low fat, healthy alternatives to old favorites.
My favorite family cooking traditions
My father worked in a candy factory as a very young man, and my great grandmother was a candy making whiz. My mom made all sorts of candies every Christmas, and after a several year hiatus (fudge only) I have picked up this family tradition.
My cooking triumphs
Recently won first prize in a Halloween baking contest for my "haunted house" cake. My two-toned fudge has people chasing me around at work begging for more.
My cooking tragedies
Um, I'd go into that, but this section says I'm only allowed one thousand characters maximum. LOL

Quick Quiche
Darn! I really wanted to give this 5 stars like so many others, but something must have gone way wrong with our version because it just didn't taste like or have the consistency of quiche. I'm vegetarian so omitted the bacon, but otherwise followed to the letter and got a bottom crust of cheese that turned too hard to cut as soon as it was out of the oven, and the eggs were a bit rubbery and just tasted like eggs. On a more positive note, I did find pieces of this made for a decent egg sandwich the next day.

Caramel Chocolate Corn
Great! I couldn't believe how simple this was in the microwave, and it tastes very similar to a version a friend of mine paid $18 for a small tin of from the Boy Scouts a couple years ago. I wasn't sure about doing the caramel coating in the microwave, but I was feeling lazy and didn't want to boil sugar on the stove. This worked perfect. And the paper bag trick made the whole process a breeze. My kid had fun helping shake the mix, too. I'm curious whether the paper bag might work for mixing the chocolate coating, too. I had some trouble getting it even--it turned out rather patchy. I used microwave "lite" popcorn and diet margarine to save a few calories. I found that two bags of cheap microwave popcorn gave me exactly 16 cups, and the caramel mixture covered it well. I used candiquick instead of chips like i saw recommended here, but 1 cup didn't cover it as much as I'd have liked--the scouts' version looks like every piece is dipped individually and mine turned out pretty uneven. Still, this was very rich and delicious. My 4 year old isn't crazy about chocolate (believe it or not), but it was all I could do to keep her from eating it all before it was even cool! Luckily my husband wasn't home when I made this or I might not have gotten any, either. I'm going to take some to work tomorrow and watch people's eyes roll back in their heads in delight! Thanks for sharing this great recipe.

Chinese Fried Walnuts
Just finished a batch and Yum! I was so happy to find these--my mom made them every New Year's but we both lost the recipe long ago. The nuts do burn easily. Mine cooked in half the time listed over a very modest medium heat. The salt is optional, but I recommend it because it adds a nice bit of zing. Thanks so much for sharing this! Can't wait to send the recipe off to Mom.
