Mushroom in the Middle Meatloaf
Delicious! The soup makes it very moist throughout. I would agree with some other users however in that next time I may use a low sodium variety. I also used ground turkey instead of pork just because that is what was in the freezer. Next time would also like to try putting hunks of mushroom in the middle as well.

Mini Frittatas
Not a big fan. Too much cumin....it overpowered the dish. Also, I cooked it for over 40 minutes and it refused to set. I will not be making this again.

Easy Sausage Chowder
Good recipe. I modified it a little, left out the basil, simply b/c I didn't have any, and added red pepper flakes and paprika. Also substituted cream for the evaporated milk and creamed corn. Served with corn bread - delicious!
