BLT Pasta Salad
Simple and yummy. I added some chopped baby spinach to make it more nutritious and BLT-like.

Curried Coconut Chicken
My husband and I liked this, the kids not so much. I did not put in the full amount of sugar. It seemed a trifle bland; I would like to experiment with different kinds of curry powder.
