Cheeseburger Soup I

Enjoyed it very much! Made a few changes - used 1lb of ground turkey, cut the butter down to save on the fat a bit, used 2% shredded cheese & light sour cream & steamed frozen baby carrots on the side & added to soup at end. Topped it off with some crumbled whole grain Club crackers. Definitely will make again!

Vegetarian Baked Pasta

Delicious recipe - the gorgonzola really gave a kick to the dish. Cut the mozzarella in 1/2 & used reduced fat as well to cut back on the fat (enough cheese for me, husband sprinkled more on his 1/2.) Only used 5oz of gorgonzola - that was the size of the package I got. Not sure if I'd want to use more next time - it seemed to taste just right with what I used.

Easy, Cheesy Zucchini Bake

I was looking for a vegetarian side dish, so I made this without the ground turkey. Turned out on the watery side, so I will cook the zucchini 1st as others have done. Might skip the corn too - didn't seem to add to the dish overall. Did add some seasoning & used mozzarella as I was using that in a pasta dish I was making at the same time. Overall, will try again with some changes.

Asparagus Potato Soup

Absolutely delicious! Husband stated, as another reviewer did, that it was like a soup you'd get at a restaurant. Only changes I made were to use chicken broth & water (skipping the chicken bouillon,) used 2% milk & I cut the butter down to 3 tablespoons. Will definitely make again soon!

Turkey in a Bag

Made this twice & turned out great both times! Turkey was so tender it was falling off the bone. We did rub some butter on outside of skin, but otherwise made no changes.

Smashed Cauliflower

Good taste - 1st recipe where I tried out parsnips. Husband really liked it - I thought it could use a little more zing. Drained cauliflower so as not to have the soupy texture like others. Did not get the mashed potato texture using a masher - will use the food processor next time.

Portobello Penne Pasta Casserole

Terrific recipe! After reading other reviews, made some changes: used a 14oz box of whole grain pasta, fresh spinach, low-fat mozzarella & 2% milk, cut butter back to 1/4 cup, doubled garlic, added an onion, red pepper flakes & pepper plus mixed most of the cheese in with the milk & only saved around a 1/3 cup to sprinkle on top. Not sure why others thought it was bland at all. Will definitely make again.

Tangy Slow Cooker Pork Roast

Tasty, but not overpowering - just what I was looking for to doctor up the porketta roast I had a bit. Plus it was so easy to get together & w/ the cost of food today, I liked not having to buy a ton of extra ingredients - I had everything on the recipe! Only change I made was I doubled the recipe since I had a 4.5lb roast.

Baked French Fries I

Good & easy potato side to make. Don't have to worry about whether I have the ingredients on hand. I used 5 potatoes, 2 TBSP of olive oil & just sprinkled the seasonings on. Will cut down time to 40 min - got a bit burned at 45 min at 450 degrees.

Slow Cooker Corn Chowder

Made a few changes - used only 1 onion, skipped the ham since I didn't have any as well as the celery (which I just don't like,) 1 can corn + 1 can creamed as per other's reviews (though next time I might even add another can of corn, but drain it,) used chicken broth instead of water & added in corn starch & half & half per other reviews. Only problem w/ mine (& it was my fault) was putting to much chicken broth in so it was more of a soup texture than chowder texture. But overall good tasting & will make again - it's a good & relatively easy crockpot recipe & was exactly what I was looking for.

Cheesy Beans and Rice
