Magnificent Cheesy Brown Rice
Nice simple way to add a vegetable to a brown rice side. Used vegetable broth instead of water & instant brown rice to cut back on the cooking time. Also used 1 1/2 peppers & scallions. Will try different seasonings next time - I can see how some might find it bland, especially since plain brown rice doesn't have the sodium like other rice side dishes do.

Quinoa and Black Beans
Delicious & healthy dish - added more cumin & cayenne to spice it up & used dry organic black beans that I had cooked already - will definitely make again!

Baked Brussels Sprouts
We really liked the basic recipe. Skipped nuts & cheese due to looking for simple recipe as side. Used half the amount of butter. Cooked extra 15 minutes since we like them more tender.
