Spent the last 20 years living in Europe and Asia. Although I spent the last 6 years living in Thailand, I think I prefer the mexican type dishes better. It's not as spicy as Thai food. Chicken or pork is the easiest to make a savory dish people will ask for more. Not very good at it now but I used to cook a 'mean' Texas chili. Never try to cook a dish with the hot sauce added during the cooking. Let the person who is eating it decide how spicy they want to eat it.
