Banana Pancakes I

Very nice taste but the cooking instructions should not say over medium high heat as the outside browns too fast and the inside is mush. Maybe next time I will try it over low heat? Thanks for the recipe.

Banana Chocolate Chip Cookies

These are very similar to cookies my mom used to bake. Cake like cookies aren't a favorite of mine, but banana chocolate chip cookies taste so good as such. I modified the ingredients slightly. I used 1/2 whole wheat flour,1/2 white flour and used only 2/3 the amount of sugar (half white, half brown). I substituted half of the butter with half cup of applesauce which likely added the cakiness but worth the health benefits. Also I modified the quantity to make 27 and ended up with 70 cookies! They are kind of small but definitely large enough for little ones like mine. Thanks Evelyn!

Hummus III

This is one recipe that will be altered by most ONLY because we all have different tastes. It's a great starter Hummus - not spicy - great for kids. I used artificial lemon juice(1/2 the recommended amount) and it is goood. I modify it slightly every now & again to suit our mood. It's worth a 5 because it's a great one to work with or eat as is. Thanks!

Banana Crepes

Too sweet...I love sweet but even my five year old couldn't finish one as she said it was too sweet for her and it was making her feel ill. Otherwise, it's tasty but I'd reduce the butter and b.sugar next time.

Flax and Sunflower Seed Bread

Baked Dijon Salmon

Mustard often over powers the flavor of Salmon but in this case it was perfect. We had no dijon so I used horseradish mustard....i bet the dijon tastes a little better. I have kids who don't eat pecans yet so I cooked them in the skillet with a bit of sugar and water and put them on the side. I cooked a half of salmon, using the serving of 4 suggested on the main page. I upped the bread by a bit, but it wasn't necessary. Thank you for the recipe!

Bran Flax Muffins

I love this recipe. It's flavorful and healthy. I substituted for 1/2 whole wheat flour and 1/2 regular. I had no oat bran, so used wheat bran...just a bit less. I doubled the recipe and just guessed at how much to add for fruit/veggies. I used 2 carrot, 2 apples and a small zucchini for the filling as well as 1 1/2 cups raisins. I also threw in some applesauce to have the right wetness. I made 24 regular sized muffins (17 min.) and 24 mini muffins (11 min). Thank you. I will make this again.

Barbeque Chicken

Absolutely what I was looking for. I rarely have BBQ sauce so this was such a delicious treat. I had no vinegar, so used red wine vinegar in its place. I also would recommend doubling the recipe but that's cause I love sauce. I didn't find it too watery....again I love sauce. It's certainly not a paste, but is nice to have the drippings to spoon over the chicken & veggies. Thank you!

Taco Salad I

A very good salad. I used Catalina instead of French dressing, as suggested by another reviewer, as I don't care for French dressing. I gave this a four because taco seasoning doesn't need to come in a package and it's super easy to make...i followed taco seasoning 1 recipe. It was great. Thanks!

Very tasty! Unfortunately we only had an hour to marinade but it still left a great flavor on the bbq'd chicken. I used bonesless skinless thighs. Careful to watch on the bbq seeing as how much oil is used. Thanks!

Chewy Chocolate Chip Oatmeal Cookies

Finally a basic Oatmeal cookie recipe that turns out chewy & moist and not flat. I followed the tips on refrigerating the dough for a couple of hours before baking. Instead of 1 1/4 cup of white flour I used 1/2 cup whole wheat, 1/2 cup white and 1/4 cup of oat flour. I also added 2 tbsp of flax seed flour, an extra 1/4 of oats and omitted the nuts adding raisins instead. Mixed with my kitchen aid mixer and scooped with a cookie dough scooper. It made perfect little cookies that didn't spread. Thanks so much for my new standard Oatmeal cookie. Oh...i also deleted all nuts, used 1/2 cup choc chips and 1/2 cup of raisins. I also strongly recommend only half the salt.

Buttermilk Honey Wheat Bread

This is excellent & easy to make. I use the most helpful tip (in reviews) to create & bake accordingly. The only thing I changed was I used 2 cups of bread flour and 1 cup of all purpose. I've also used both buttermilk and it's substitute (milk with apple cider vinegar added) and both have turned out delicious. Thank you!

Whole Wheat Refrigerator Rolls

Perfect amount of sweetness and whole wheat taste. I left the dough out on the counter till it doubled, rolled balls (1.5" diameter)into muffin tins and was able to get 21 buns (I made the recipe for 12). My 4 year old, 2 year old, husband and I thoroughly enjoyed them this evening. Thank you.
