Finally a basic Oatmeal cookie recipe that turns out chewy & moist and not flat. I followed the tips on refrigerating the dough for a couple of hours before baking. Instead of 1 1/4 cup of white flour I used 1/2 cup whole wheat, 1/2 cup white and 1/4 cup of oat flour. I also added 2 tbsp of flax seed flour, an extra 1/4 of oats and omitted the nuts adding raisins instead. Mixed with my kitchen aid mixer and scooped with a cookie dough scooper. It made perfect little cookies that didn't spread. Thanks so much for my new standard Oatmeal cookie. Oh...i also deleted all nuts, used 1/2 cup choc chips and 1/2 cup of raisins. I also strongly recommend only half the salt.
