Shrimp Fried Rice II
I've never made fried rice, and this recipe was a perfect starting point. Not too complicated, fail-safe recipe that stands up to numerous modifications. I will make this again and again, with whatever veggies and protein I happen to have on hand. Drop the extra salt, and use brown rice!

Tasty Fried Eggplant Balls
This recipe automatically earns five stars because my husband, four-year-old, two-year-old, and eight-month-old all devoured it! I shallow fried them in an iron skillet, flipping them halfway through cooking. Also used extra cheese, and a small red pepper instead of the green pepper. Very worth the extra effort to dip them in flour, egg, and breadcrumbs. It gives them that irresistible chewy/crunchy coating everyone wants when they go to the trouble to fry something. Just abandon yourself to the process and have fun with it! Next time I will use mozzarella and parmesan with some italian herbs...

Boston Baked Beans
I was looking for a classic baked bean recipe using dried beans, and this fit the bill perfectly. I doubled this recipe, soaked and precooked the beans as recommended. They turned to mush--next time I'd skip boiling the beans before they're baked, and I'd also pre-fry the bacon before adding it to the beans. They were fabulous, but shoe leather would be fabulous combined with that much bacon fat. Wonderful flavor, though, and perfect amount of sauce and spices. I added a little liquid smoke per another review, and some extra molasses because I didn't have any brown sugar. I'll make this again and again!
