Angel Chicken Pasta

This is really good comfort food. I adapted this for a quick dinner and cooked the whole thing on the stove. I used three chicken breasts cut up in small pieces, but the same amount of everything else for the sauce. I also used a whole package of mushrooms that I sauteed first in a tablespoon of butter with half of a small onion. (This is all the butter I used.) Served over pasta... Really good.

Wine Jelly

This turned out really well for my first time. I used one bottle of a $3 wine from Wal-mart for each batch. I used white zin and a cab sauv. There seemed to be some problems with the pectin for other people, but it worked well for me. I used a 1.75 box, but put it in with the wine and sugar while I washed the jars. For the initial bring to boil, I set it on medium and let it slowly come to a boil rather than quick boiling. Make sure too it boils hard for a minute. This may have something to do with how it sets...The jelly does take a few hours to cool and set once all is done. I experimented a bit and put one in the refrigerator once it had cooled a little while and it really congealed quickly. The flavor was great! I was going to bring them to Thanksgiving as a little something for everyone. I made a little label on a word document and underneath the name put all the ways you could use it. I gave these away and everyone loved them. I'm now making more for coworkers...

The Best Lemon Bars

These were good, but not the best. The crust was super buttery and way too thick in proportion to the lemony goo. They just didn't taste lemony enough for us and I added an extra lemon (juiced) and lemon zest from all three lemons. I think the butter in the crust overwhelms the lemony flavor. We would have preferred twice the goo and half the crust...

Cajun Chicken and Sausage Gumbo

I made this after work one day and took the express route. I fixed it in about an hour. To save on time, I cut chicken breast into bite size pieces and cooked it in the pot. Overall this came out really great and had the "cajun" taste I was looking for. Instead of pepper and salt, I substituted Tony Chachere's. Very Good!!

Garlic Chicken

This had more flavor than I anticipated. I did use Italian bread crumbs and salted and peppered the chicken. I think next time, I will prepare the garlic/oil in a cast iron skillet and then bake the chicken in the same skillet so it gets crispier on the bottom.

Beer Bread I

This wasn't very good as written. It wasn't nearly sweet enough. I feel like if there are three ingredients and one has to be substantially changed then it's not that great of a recipe on it's own. You will need much more sugar to make it enjoyable.

Mimi's Slumgullion

This is definitely a man's meal. My husband enjoyed it although he said he would have preferred the sausage grilled first. Don't use very much oil to saute onions because the sausage is really greasy and you won't want any extra! It was good and something I might make again if I don't have much at the house, but not something to go out of my way to make.

Appetizer Chicken Kabobs

These were relly good. My husband was dreading another chicken night and when I served these, he loved them! I also put red onion on the skewers and then grilled them. I think I might use low sodium soy sauce although my husband said they were perfect just they way they were... Thanks for a great recipe!

Sweet and Sassy Pork Tenderloin

This was very "gourmet," but had to be altered quite a bit for our taste. I'm from the South and like spice, but this was way too spicy and vinegary at first. I had to add a bit more brown sugar and some balsamic to balance the flavor. This was something that worked for dinner in the end, but not something I will make again...

Chicken Cordon Bleu II

This was super good and the sauce was delicious. I substituted chicken stock for the wine, but wasn't sure if I should still put in the chicken granules. Still put them in. I didn't at first and it was quite bland. As soon as I added in the granules, it was perfectly seasoned! I also used 1% milk to save on fat and it was still creamy enough for us... So don't not make because of the fat content. Substitute!

Ronaldo's Beef Carnitas

This was good. I accidently bought a less fatty roast and it was a bit dry. So I took it out of the crock, cut it up and simmered it in chicken stock and this helped it to get to the "pulling apart so easily" stage. So if you buy a "better" less fatty cut of meat, pour some chicken stock in there to help with the moisture! Other than that very good...

Aussie Chicken

This was really good and probably would have been better as written, but I wanted to make it a bit lighter. I brushed the honey mustard sauce over the chicken breasts, and topped it with the sliced mushrooms, bacon, and cheese and then stuck it in the oven for 30 minutes. I would place foil over it for a bit so the cheese doesn't burn. Very good taste this way!

All-Day Apple Butter

So the first time I made this, I did what other reviewers did and put it in the crock overnight. bad idea... I woke to charred apple butter! I attempted to make it again and cooked it during the day using fuji apples. The second time, I cooked it for about 4 1/2 hours and then blended it. IT was GREAT! My husband loved it.

Gourmet Mushroom Risotto

This was really tasty and hearty enough to be a main course! I had never had risotto but saw it served on Hells Kitchen and decided to try it out.... It does take a lot of stiring, but is really good and I think I might experience with other add ins next time!

Corn, Sweet Onion, and Tomato Salad

We gobbled this up. I didn't have sweet onion so I used a bit less of yellow onion and diced it fairly small. I don't keep rice vinegar around, so I used a bit of red wine vinegar and put in a pinch of sugar. YUM YUM!

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

This is super super good and probably would have been better as written... But I changed it a bit to cut back on the fat! I used a bit less bacon, and fat free sour cream. I wet the chicken breast and coated it in italian bread crumbs. Then I stuffed the breasts and popped them into the oven. At the end of the cooking, I sprayed it with some olive oil to brown a bit. I served it with a cold corn, tomato, onion salad. It was a great balance to the heavy delicious chicken.
