Chicken Soup II

Really good! We don't like green peppers so we left them out, but other than that I made it just as listed. Served with some warm sourdough bread and it was a hit with the whole family!

Apricot Balls

So easy and a welcomed addition to my annual array of Christmas goodies! I made the recipe exactly as shown, but added some graham cracker crumbs (about 1/4 cup) to the mixture to make it a bit more workable, and I have to say it was delicious cut the sweetness a bit. I rolled them very small (1/3 inch)and then rolled half in coconut, and the other half in graham cracker crumbs to add a bit of variety.

Cheese and Broccoli Chicken Soup

Very good! I used ham instead of chicken, so I needed less seasoning. I also cut the recipe in 1/2 and it was just enough for a hearty bowl for 4 of us. Served with some garlic and cheese bisuits and voila! a nice comfort food to have a on this snowy winter night!

Peaches and Cream Pops

A yummy (and healthy) treat! I bought a 1/2 peck of peaches from Michigan to make some jam, and had some left over. I made some fresh and froze some for making during the colder months, too! Did the same thing with my blueberries from Michigan, too!

Oven Fried Chicken IV

Very good! They came out crispy because they were cooked on the rack, and I did it in my toaster/convection oven, too! Much healthier than frying it - and so simple. I didn't have sour cream, so I used plain yogurt and mixed in the seasonings then rolled in crushed RICE KRISPIES (I didn't have corn flakes). The kids gobbled it up, and so did we! I'll definitely make this again.

Peach Pie

Nothing better than fresh peaches! I made a mistake (oops) and used 1/2 cup of butter, but had luckily added 2T of cornstarch because of past reviews of it being runny....turned out decadent. I also topped with a crust and put a sugar glaze. Yummy! Next time, I would be sure of my butter measurement and hope that the cornstarch would keep it from being runny, because I did run into that problem as well, but attribute that to my mis-calculation.

Blueberry Sour Cream Coffee Cake

SO GOOD! I used fresh blueberries (and coated them with flour) and added 1T of valencia orange peel zest to the batter. A great way to use fresh blueberries, and because you only need the 1 cup of them, you have plenty to use in other recipes or jams too! Will definitely be making this again - the entire family is licking their lips!!

Dirt Cake I

Made this for my daughter's 4th birthday and it was a big hit with both kids and parents! I put it in individual cups for each child and topped it with an artifical flower and some worms...they had a blast eating it! I put all the "leftovers" into a bigger bowl and topped with an artificial flower bouquet and served to the parents. Not only is it a fun idea - it's very delicious!

Creamy Rice Pudding

Very good! I used organic brown rice (long grain) with soy milk, organic egg, sugar, etc... VERY delicious and easy. I just used the leftover rice from dinner and added the other ingredients as instructed - came out perfectly and loved by everyone, especially the kids!

Sugar Cookie Glaze

The very best glaze I have worked with. The kids and I have made Christmas and Easter cookies now with this recipe and have created some beautiful designs - even for 3 and 5 year olds! I usually dip the cookies first, let them dry overnight, and then decorate with the kids the following day. I always double the recipe, too, so that we have plenty of color choices - and buy paintbrushes just for this use and keep them with my food coloring. TERRIFIC!!!!

Shrimp and Crab Bisque

Made this on CHristmas Eve for our hot soup (a tradition) and it was a success! Everyone loved it, especially the chunks of crab and shrimp. I had to quadruple the recipe for my party, however, and it still wasn't enough. Thanks for the recipe and we'll definitely keep this on our list for next year's party!

Double Tomato Bruschetta

I love bruschetta......and this recipe is by far the BEST recipe I have ever made or tasted. I served this on Christmas Eve and it went within minutes and I had made 2 batches. I made it ahead of time and left it in the fridge overnight for optimal flavor. I toasted my bread with garlic butter and parmesan seperately and put the (warm) toasts around the edge of the platter with the (cold) bruschetta in the middle. I have never had more compliments on a dish EVER! Will be a staple item on our Christmas Eve Appetizer Buffet table. THANKS SO MUCH!

Sugar Cookie Icing

Wonderful! The only change I made was some extra milk and cornstarch to make it the right consistency for spreading and painting. First I spread it with either white, red, blue, or yellow icing and then the kids (ages 4 and 3) and I went to town painting them! This is going to be a new tradition in our house and will give us many holiday memories throughout the years! Thank you!

Pumpkin Chocolate Chip Muffins
