Absolutely delicious salad. We had small fresh tomatoes and basil from our garden that we were looking for a recipe to use them in and we definitely picked a winner.

My family loved it. I used fresh rosemary and and some thyme as others suggested. The 2nd time I cooked this I used 1/2 wine and 1/2 sherry vinegar. I deglazed the pan with a few more tbsp. of the vinegar and it made a wonderful rich gravy.

I made a double size batch for 8 (4 adults and 4 children ages 4-13). Everyone loved it and had 2nd and 3rd helpings, including my 11 year old son who had 3 helpings at dinner and then snuck another few spoonfuls while we were cleaning up after dinner. When adults and children all rave about a recipe, that's a winner. We will definitely be making this again.
