Quick and Easy Pancit
Very tasty! My husband and I both found it needed more soy sauce. (that might be a matter of preference) I took one reviewer's idea and used a bag of coleslaw mix instead of cutting up a whole cabbage. This made it very quick. I did need to add 2 carrots to the coleslaw mix as there was very little carrot in it. Make sure to soak the noodles long enough and check that there are no hard clumps remaining. I would suggest adding more vegetables. I think that sweet red pepper and mushrooms would be a great addition - added with the onions and garlic at the beginning. I will definitely make this again!

Beef Curry Soup
This soup was quite good. Actually very flavourful - despite a few reviews that said it was bland. The only changes I made were to add 2 small carrots, diced and one sweet potato, diced. The sweet potato added a nice flavour to the soup. Next time, I may add a small amount of cornstarch to thicken it slightly, but I didn't feel it was too watery.

Zucchini-Chocolate Chip Muffins
These muffins are delicious!! I took some of the other suggestions. I doubled the chocolate chips and added a shredded, peeled apple with the zucchini. I did not have mini choc. chips, but regular worked just fine. For added fibre, I used half whole wheat flour. I only added half the oil - still very moist! I don't like nuts in muffins, so left them out. I doubled the recipe and it made 18 large muffins. Note: the batter is VERY thick, but once the zucchini is added, is perfect. Thanks for a great recipe!
