About this Cook
I love to cook and I love to have folks over to eat. I think most folks consider me to be a good cook--although I wouldn't class myself as 'expert' as I feel there is always so much more to learn. I was raised in the South (NC) and when my children were young, I was a typical 'Southern cook'. However, once my children were grown and on their own--I moved to Ireland, which has now opened up a new world of cooking.

My favorite family cooking traditions
Sunday dinner with my family; the big favourite being roast chicken w/ stuffing and gravy made from the drippings, creamed potatoes, deviled eggs, and vegetables. We live far apart now, but whenever the children visit you can be sure that there will be a 'big Sunday dinner.'
My cooking triumphs
Nothing will ever compare to the first time I fixed creamed potatoes. I worked so hard on them, I didn't have time to fix anything else--but they were edible and gosh was I proud--and I haven't stopped cooking since. My 'claim to fame' however, is my pig pick'n. Nothing finer than a whole pig cooked all day then bathed down in vinegar and red pepper and served up straight off the grill(a very big grill). A great way to serve 100+ friends.
My cooking tragedies
Talk about not being able to boil water. When I was a teenager and my dad and I were left on our own, I attempted to boil eggs in a small aluminum pot; they cooked so long that all the water evaporated, the pot melted into the stove (which had to be replaced). This is just one of the cooking catastropes that my dad and I 'enjoyed' over our years of learning to cook.

Caramelized Brussels Sprouts with Pistachios
Excellent recipe. I too subbed Balsamic for Red Wine--because that's all I had on hand--and I love Balsamic. I was going to leave out the pistachios because I was having trouble finding them; however, I finally found some overpriced ones, bought them anyway--and was glad that I did--gave it a great bit of extra texture. One of my guests said he didn't like brussel sprouts, but thought these were great; I lost count of how many helpings he had. This is an excellent holiday side dish. Thanks

I followed the recipe exactly and I can't imagine that it could be any better. I placed three each on individual, long narrow plates, poured over the jus and served with a slice of rough torn french bread from the oven. It was simple perfection.
