Spicy Indian Chicken and Mango Curry
Dee
About this Cook
I'm a military wife and a mother of four. We move a lot and in each new area, we find new things we like to try. Being in Cali now means more of a sustainable living kind of lifestyle, which is quite fun! I am a certified book nerd and I love trying new recipes for my family to eat!
My favorite things to cook
Lasagna...hands down. It's relatively simple and it tastes so delicious when it's all finished. I've started making our own bread recently and am enjoying learning the fine art of that process.
My favorite family cooking traditions
My family never really had any cooking traditions. The biggest tradition was to stay out of the kitchen when someone was cooking. I'm trying to break that habit so that I can teach my kids how to cook and enjoy it.
My cooking triumphs
It would have to be my very first loaf of bread that I made. My husband took it to share with his colleagues and wound up coming home with requests for more bread from several people. They all thought it was delicious!
My cooking tragedies
The first time I ever tried making potato soup. I scorched the base mixture and didn't realize it until it was all done. Oh, it was horrid! I wound up pouring it all down the disposer and making sandwiches for dinner.

Spicy Indian Chicken and Mango Curry
The only reason this does not get 5 stars is because, as written, the recipe is very bland tasting. We love Indian food and love the spices, but I believe the puree was the culprit in drowning out the spiciness of this meal. It was mild, at best. Next time I will make some changes to the spice blend and hopefully it will make me rethink the one star I am not giving now.

Springfield Style Cashew Chicken I
I made this for my husbands birthday as a surprise for him. He grew up in Springfield, MO, and everytime he goes back...this is the first meal he eats. It tasted EXACTLY like it should taste and he will ask for it now about once every week. I did have a little trouble with the cornstarch, but finally figured out the trick to it after calling a woman who lives in Springfield and makes it every week. By far...this is as close as you can get without having to go to Springfield!

Kati Rose's Cheese Ball
This was by far, the easiest and best tasting cheeseball I have ever made. I served it as an appetizer during Thanksgiving and my mother-in-law just thought I was the greatest because it was the first homemade cheese ball she had EVER eaten. I love her, but she doesn't cook..ever, and just buys everything already made from the grocery...including cheeseballs. It was a lot and I thought there would be some leftover, but I was so wrong. I've made it several times since and am always asked to bring it to get togethers now.
