Rolled Buttercream Fondant
I love rolled buttercream and actually used this recipe to cover my wedding cake. I predominantly use this for sugar cookies when I don't have time to use flood royal icing. The flavor is much better than traditional fondant, though a bit more difficult to work w/ as the rolled buttercream has a tendency to soften a bit too much in warm hands.

Golden Sweet Cornbread
I like my cornbread sweet and this didn't disappoint. I made cornbread muffins in a standard sized pan and the recipe yielded about 16. Served them w/ chili and it was a wonderful meal.

Easiest Peanut Butter Fudge
I had never made fudge before but had a craving for it. I had all of the ingredients on hand to make this and was pleasantly surprised w/ the ease of it. Follow the instructions and you shouldn't have any trouble. My mom, who is an expert fudge maker was even impressed!
