Caramel Bars
Yum! This was delicious. At a buffet table full of desserts I am proud to say that my plate of goodies emptied first. I did use the 9x13 dish and they still turned out very chewy. I just cut the cooking time by 3 minutes to ensure it stayed moist. I honestly can't imagine using an 8x8 dish because they are very sweet and having a bar that is over an inch thick might be too much for some. But I suppose you can just cut them smaller. All in all I highly recommend this recipe for you caramel ooie-gooie lovers.

Skillet Zucchini
Well I have to say I made quite a few changes to this recipe just like the others that reviewed this. I did not have tomotoes so I used red bell peppers and proscuitto. Essentially I just sauted the zucchini, bell peppers, proscuitto and garlic together. I skipped the cheese sauce and breadcrumbs all together and decided to go a healthy route. To top off the dish I grated asiago cheese over the veggies. Everyone loved them and had seconds.

Strawberry-Mango Mesclun Salad
This salad was excellent. I really didn't change a thing except that I used splenda instead of real sugar. Delicious.
