I have a busy life with 2 little ones & a third on the way, therefore I have to try to squeeze cooking into my schedule. I enjoy cooking, but don't enjoy the dishes afterward!
My favorite things to cook
My specialty is homemade meatloaf and mashed potatoes. It's one of the few things I don't use a recipe for & is almost always delicious.
My favorite family cooking traditions
Every year my sisters & I try to get together to bake cookies before Christmas; we don't always get many cookies made but we have fun!
My cooking triumphs
I guess I must not have improved too much in my cooking techniques because the only "triumph" I can think of right now is the meatloaf & mashed potatoes that I have been making since I've been married!
My cooking tragedies
My most memorable cooking "tragedy" was when I was first married. I grew up with 12 brothers/sisters (some "real" some "step"), so I was used to watching my step-Mom make large quantities of food. One of the first suppers I made for my husband was spaghetti; I thought I was making a "small" amount when I used a whole box of spagetti & jar of sauce! We were eating spagetti for WEEKS!

No Bake Peanut Butter Pie
Delicious pie! I even used fat free cool whip and it still tasted great. I also took some of the chocolate and peanut butter chips, chopped them with my "Magic Bullet" and mixed them throughout the pie; it made it even prettier.

Asparagus with Parmesan Crust
I have made this several times this year & it's always a hit! Even my 2 year old daughter eats it up! (we don't use the balsamic vinegar, though)

Throw Together Mexican Casserole
This recipe was GREAT! Wonderful served with sour cream and tortilla chips!
