Fantastic! My kids (8 & 4 years old)-who keep telling me they don't like eggplant-asked for seconds! I followed the suggestions of a few other peope, I salted the slices to sweat them for about 30 min. Then I baked the slices for about 25 min before adding the sauce & cheese. I think the baking time depends on how thick you make your slices. I also added garic, oregano, basil & a little salt to Itaian Style breadcrumbs. My kids tried it after I baked it but before I added the cheese & sauce and they loved it just like that. Super easy, flavorful & kid approved!
