Panzanella Salad

A new favorite summer salad for me! Since getting the book Artisan Bread In Five Minutes A Day (fabulous book, highly recommend!) I am baking bread almost every day. So I often have a leftover crusty loaf and this was an outstanding way to use up some day old bread. I love the idea of trying it with capers instead of olives too as other have suggested. I can't get enough of ALL of these ingredients so this is a fabulous summer salad! Thanks for sharing.

Easy Mint Chocolate Chip Ice Cream

I just bought the Cuisinart Pure Indulgence 2 qt automatic ice cream maker and this was the very first recipe I made in it. To quote my niece, "Yummylicious!" I adore mint chocolate chip ice cream, especially when it's homemade. This recipe was super simple and I must say I am in love with my new ice cream maker and I HIGHLY recommend the Cuisinart machine! It took me about 5 minutes to mix up the ingredients and about 20 minutes later I was enjoying this delicious recipe. I used whole milk in place of the 2%, but that was the only change I made to the recipe. In the future I will probably only add 3/4 t. of peppermint extract as I thought the mint flavor was just slightly too powerful. Still, I believe this recipe is worthy of five stars.

Mocha Cooler

Fabulously delicious! I have made this both cold and HOT depending on my mood. It goes quickly so I think I will start making a double batch to have on hand all the time. I have had it every morning for about a week now and I have no inclination to stop! Thanks for sharing!

Waistline-Friendly Turkey Chili

I thought this was pretty good and with the modifications I made to the recipe I probably would only give it 4 stars. I assume if I would have had the chipotle bbq sauce I would have liked it better, hence the 5 star rating. Also did not have the bell peppers on hand and that probably would have made it better as well. I used regular bbq sauce and added chipotle chili powder. The bbq sauce I used was too sweet for my taste. I added an extra can of tomatoes since I had an extra person to feed at the last minute. Because of that I served the chili over spaghetti noodles to make it go further. I was afraid we wouldn't have enough for my big family (big eaters). However, because I served it over pasta we had enough to have two more rounds of leftovers. I will probably make this again, but I would want to use the right bbq sauce and add the bell peppers. Fam couldn't believe it was ground turkey. Planning to slide that in on them more and more for our health's sake. Thanks for the great recipe!

Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

Super delicious! Not sure I should even rate this as the only parts of the recipe I followed were the marinade and the lime mayo. I didn't make the grilled veggies or the salsa but it was still wonderful and I WILL make again. I marinated the chicken for about 6 hours and grilled on a Calphalon indoor grill. I served on buns with a slice of tomato and lettuce with the lime mayo. I served black bean salsa (recipe from this site)and a Rotel salsa and tortilla chips and it was a fabulous meal. I can't wait to have this again!

Easy Sugar Cookies

Excellent and super easy cookie recipe! I just pulled the first batch out of the oven and I love them! I sprinkled each cookie with a bit of raw sugar before baking, but they would be just as wonderful without that addition. I highly recommend this recipe.

Pressure Cooker Barbeque Pork

I love this recipe! I love cooking with my pressure cooker and am always looking for tasty and quick meals to make. This one is just about the easiest. I used Montgomery Inn BBQ sauce and served it up on bun. I would highly recommend this recipe.

All Day Apple Butter

This is a great recipe! I modified sugar to 1 cup white and 1 cup brown as suggested by others and I thought it was still a little too sweet. Next time I will probably only use 1 cup brown sugar, or none at all. Also, I saved time by NOT chopping up the apples. I used my PC slicer/corer and placed the wedges in the crock pot. They cooked down to a somewhat lumpy consistency so I used a PC mix n chop to break up the larger pieces. I expected to have to run it through the food processor since I didn't chop the apples, but I didn't need to. I used a combination or York, Baldwin, and Braeburn apples. This was an easy recipe and I will make again!

Spinach and Sun-Dried Tomato Pasta

Outstanding recipe! I used oil packed sun-dried tomatoes and chicken broth, but did not soak the tomatoes since they were already moist. I used a little more crushed red pepper than 1/4 t. and loved the extra heat! My husband who isn't much of a sun-dried tomato fan had to force himself to stick with 2 helpings! He really enjoyed the dinner and raved throughout the meal. I plan to make this one often!

Big Soft Ginger Cookies

I love this recipe! I used butter instead of margarine since I don't use margarine as a rule. I will make this recipe again, but plan to add crystalized ginger to my next batch.
