I'm a work at home mom. I am a Passion Parties consultant and absolutely love it! (Visit my website at http://reneec.yourpassionconsultant.com) I'll be the first to admit that cooking is not my favorite thing to do, however I enjoy a good meal-especially when I managed to make it! I'm pretty laid back and would much rather play in my craft room or read than do housework!
My favorite things to cook
Anything that is quick and easy. Or anything where I can "set it & forget it". My crockpot & I have a very special relationship. Basically I'm a lazy cook. If it involves a lot of prep work or lots of different ingredients, I'm usually not interested. I also enjoy baking sweets during the holidays.
My favorite family cooking traditions
Eggs. My folks ate a lot of eggs. Omlets, scrambled egg sandwiches, & "egg in a basket".
My cooking triumphs
Christmas dinner 2006. Classic beef roast with all the trimmings. My immediate family, my parents, and my inlaws. Everything was delicious & NO mishaps.
My cooking tragedies
It would have to be my infamous hockey puck meat loaf. I was learning about microwave cooking & had a recipe for meatloaf. Things were going great! It was almost done, but need just about another minute. Instead of entering 60 seconds, I entered 60 minutes & walked away. I was depending on the bell to tell me when it was done. About 30 minutes later, I realized that it was still cooking. I pulled it out of the microwave all sizzling & bubbling. I flipped it out onto a cutting board & attempted to slice it. Ha! I believe I would have dulled a radial saw with it! It was so hard, the dog wouldn't even touch it.

Fiesta Chicken and Rice Bake
Very tasty! However I had rice issues too. Maybe precooking the rice might help.

Awesome and Easy Creamy Corn Casserole
OMG! This casserole is wonderful. Easy to make. A great comfort food. I took it to a party and overheard one of the guests say, "I could eat this until I was sick." Yes, it's that good.
