Scalloped Potatoes and Onions
I've been looking for a recipe for scalloped potatoes WITHOUT cheese. I've tried a few that were disappointing. I'm so glad I gave this one a try. . . it's just what I've been looking for! It's delicious! My hubby is more of a "rice" person, but he really enjoyed these!I've printed it to go in my "All Recipes" cook book. Thanks for posting it, Dorothy! PS: It took me more than 5 minutes to prepare, but was well worth it. . .

Spicy Baked Sweet Potato Fries
DELICIOUS! I used olive oil and a little sea salt and lightly buttered my baking sheet. I cooked them at 425° for 20 minutes on each side and they were perfect. The sugar in the "sweet" potatoes comes out when cooking and may brown a little darker than you expect, but adds to the taste. . . sort of like roasted marshmellows! We'll definitely use this recipe often. Thanks for sharing it!

Hoppin' John
I'm a senior citizen and grew up in SC. I have eaten Hoppin' John every New Year's day of my life. This is very similar to the way we make it except we've always used Field (Cow) Peas, NOT black eyed peas. We do add little garlic. I cook my peas the day before to cut down on time on New Year's day.
